Pierre Marcolini, the Haute Chocolaterie has decided to take its pop up store and transform it to a real outlet. His chocolate is one to stir your senses. Sour, strong, spicy, fruity, nutty, all of these mixed in your mouth giving you an incredible sensation of wellbeing. Chocolate makes you feel good and willing to have more. However that kind of sensation happens only with very high quality chocolate, and in Shanghai its not always easy to find.

 


His brand, named after him, got its start in 1995 in Belgium. In the 20 plus years since, they have opened more than 30 outlet stores all over the world: New York, Japan, London and now Shanghai K11.

 


Whether it’s to cure your holiday blues, or just satisfy a sweet tooth, they’ve got all shapes, sizes and flavors, and it’s real, certified chocolate with a sterling reputation.

 


In their gorgeous shop of wonders, we’re offered over 70 different kinds of chocolate. Aside from chocolate boxes they also have delectable single pieces at RMB 20 each. They are done every morning and are delicious. They have also Macaroons for RMB 25, basically the same price as Chinese brands but with a much higher quality.

The man behind the brand, Pierre Marcolini

 

Pierre Marcolini is 52 years old and has always been involved in the chocolate industry. However, what has set him apart from other high-end chocolate brands is that he makes his own chocolate in his laboratory, many others mostly use coco powder. Pierre Marcolini traveled around the world to pick the best cocoa beans and roast them in his kitchen. This way of doing things has brought him to Peru, Mexico, Venezuela, Cameroon and dozens of other coco bean hotspots around the world.



 

For their K11 outlet they use 15 different kinds of cocoa beans, delivered regularly in big bigs. Once they have the beans, they get to work on creating their line of masterpieces.  Beans are roasted, melted and reshaped as Teddy bears, Russian Dolls, Diamonds, simple shapes, you name it.  For the CNY they plan to do chickens, which will replace the monkey’s year. They are also the first ones in the world who have developed infusion from cocoa’s bean peels.  They’ve even got great drinks, RMB88 will get you one, accompanied with a sweet you can enjoy in on their very own coco lounge bar .

 


You can also try some of their chocolate desserts. They are totally irresistible for RMB170 more or less.

 


Pierre Marcolini has also made it a big goal to decrease the amount of sugar they put in their creations over the years. In 30 years they have significantly reduced it, getting as close to zero as possible in order to let the coco’s natural flavors shine through.
