Epices & Foie Gras is one of our favorite addresses in the city, and for good reasons. This establishment offers up some truly incredible French culinary: melting, ambrosial, delectable and dulcet. Nothing pretentious, only passion, perfect tastes and an abundance of creativity. We tried their new winter dishes and once again Epices & Foi Gras did not disappoint us.
Burgundy snails "vol au vent"
Pregame with burgundy snails "vol au vent". Epices et Foi Gras revisited the classic burgundy snails, in a richer version for winter. The snails have a strong body with herbal, earthy tones. Strong Wood mushrooms poached in a creamy coating, all on a puff pastry . Priced at RMB 118
Soft roasted cinnamon pear
This receipe is not a classic... nor is it a classic with a twist. It is a unique and impressive creation that French culinary enthusiasts would be impressed by. Soft roasted cinnamon pear stuffed with Pear cognac liquor foie gras. Gently placed on an orange and apricot marmalade bed and surrounded by a wide range of tasty shades. We are wordless to describe the perfect balance between the juicy and refreshing pear, the ambrosial foie gras and the dulcet marmalade. Astonishing, for RMB 138.
Emulsion of silky celery cream
Epices et Foie Gras choose to work on the celery vegetable. Because it tastes lightly citrusy, it is refreshing, herbal and matches perfectly with dairy. Here is the Emulsion of silky celery cream, served slightly warm. In the middle is a ravioli stuffed with Foie Gras (to not confuse with jiaozi, the dough is different ). Ravishing for RMB 98.
Grilled Wagyu beef
Honestly a scrumptious masterpiece to try before they run out it. This meat might be the best of your life. Well… it was for us. The quality of the meat is miles above the standard, especially for Shanghai. More than melting in the mouth, the rich Grilled Wagyu beef has a strong full-bodied fat marbled character. Higher saline notes to complete the harmony. Served with mashed potatoes, organic vegetables on a bed of broccoli and celery. Divine at RMB 320. Special meat available until they run out, so hurry up!
Faroe island Grilled organic salmon
Grilled organic salmon from Faroe island’s farm, served with celery cream, zucchini and seafood. Clams give consistency to the thick floral and lemony saffron sauce. Meanwhile, the zucchini enhances the perfectly roasted fish. RMB 189.

Sashimi served on crispy sushi rice with chipotle emulsion. Imagine the smoothness of raw fish balanced with a crispy, gently fried rice and you get it . Perfect bite to whet your appetite. Crispy Prawn “Cocktail” Fresh Wasabi
Crispy Prawns crusted with shrimp mousse and panko. Served with a cocktail sauce and topped with wasabi. Slightly spicy, firm flesh with sweet touches to wake up your taste buds. Out of these two delicate mise-en-bouches Jean-Georges surprised us with burgers. An earth and ocean competition between fish and meat, citric and peppery. Price RMB 118
Lobster Cheese Burger Green Chili Mayo and Yuzu Pickles
The first one is the Lobster cheese burger. The lobster patty is made of chucks of lobster claws, shrimp mousse, herbs and lemon zests, giving the patty a rich shellfish flair. To emphasize it, the green chili mayo adds a brilliant touch of zesty, spicy spark. Add some crunch from the salad, the pickles and the lobster itself, and you get your healthy, well-balanced heaven burger. It's every bit worth the price tag at RMB 228
JG Blackmore Truffle Cheese Burger
House made sesame bun filled with all you need for a delicious burger. The beef patty is a mixture of Blackmore M9 Australia Wagyu beef chuck and Ranger Valley MB 7 Rib-eye. An appreciable high quality meat. for a delightfully smooth, rich, yet mellow taste. Perfect balance of fat and meat, while the caramelized aspects lock in all the juice and flavor you could ask for. Ambrosia rich black truffle sauces add depth to the taste. To keep the classic aspect, fresh lettuce, tomatoes and house-made yuzu pickles are added. Price RMB 188
Cucumber Martini
Jean-Georges decided to keep with the classic cocktail for its lounge. The dishes are already surprising enough, lets keep with standards.
Fresh flavor, sweet and sour taste, with a cucumber ribbon added on top. Attention to detail, the cocktail glass is stored in a freezer at -18 ℃. The cucumber slice makes it look like a tiny snake is slithering in your hand. Is this drink the prohibited fruit wished for during your work week Eve?
