[New Bar Alert] Deus at Found 158

2017-05-11 ShanghaiWOWeng

Described as a “sanctuary, somewhere you don’t just come for a pint and a chat, but because you appreciate decent cocktails and music” by partner Yuni He, Deus is certainly worthy of its name, letting revelers worship at the altar of this boutique bar.

Targeting people who appreciate a place with heart and soul, the décor at Deus is all about contrast: rough unfinished concrete mixed with elegant herringbone tiles. There is a crocodile red wall at the far end, juxtaposed against polished bronze, and a long black marble bar.

However, this is all contrasted against materials that are very raw: There is steel, exposed ceilings and raw concrete to really shock the visual senses. Maybe the only thing missing is a flash of color. With a bit of bespoke art on the exposed walls, this place will really come into its own identity. There is still time for this as the bar moves out of soft opening.

The bar has a unique music policy: There are no digital decks, only vinyl, a throwback to an age when DJs had to mix without assistance. The Varia Instrument customized mixer is designed for fully analog sound, keeping the vibe soft and smooth, something of a rarity in Shanghai. The space is all set for well-known DJs passing through town to come by and play a Sunday night lounge set.

Head barmen Kevin Xie, previously of M on The Bund and the Long Bar at the Waldorf Astoria, is onboard, taking up a part HR role. Being an independent bar there’s room for the team to take on extra roles, giving everyone a stake and leading to a higher standard of service, something very welcome in Shanghai. If you have a vested interest in keeping customers happy then that benefits everyone.

Craft cocktails are the specialty at Deus. Eight house specials, ranging from rum based, to vodka based, to tequila based are on the menu. Using dry ice and fire components, the drinks become a visual experience in addition to being an experience for the taste buds.

We tried a few different cocktails from their signature list.

The first sip of the Flower Bomb is like the first kiss with a new lover: Sweet, beautiful and you want to go back for more. It is inspired by a bouquet of flowers and is particularly favored by the ladies. It contains their homemade raspberry infused vodka, amaretto, lime, lychee and cranberry juice. Garnished with a cherry wrapped in a whole lychee, the cocktail offers a refreshing, alluring aroma.

The Aphrodite Kiss is made using their homemade rosemary infused gin, black cherry liqueur, fresh lemon juice, syrup and cherries. It is the male companion to the Flower Bomb and is less sweet and has a delicious bittersweet flavor from the dark cherry.

The Cerberus on Guard comes straight from Hades with its deep bitter flavor. Made from Zubrowka Bison Grass vodka, Chambord, crème de cassis, grapefruit, lime juice and berries, it is served in a skull glass that needs to be lit up to appreciate fully, but reflects its status as a drink for the darker tastes out there.

The Snow Nymph is pretty much a Crème Brule in a glass: Southern Comfort, crème de cacao, Irish cream, bananas, syrup and whipped cream. This could comfortably be your after dinner dessert.

We also tried a couple of the classic cocktails:

The Datong Mule, Deus’ spin on a Moscow Mule, blends their lemongrass infused vodka, ginger beer and angostura bitters. But whereas some Moscow Mule’s can go OTT on the ginger flavor, this one is more subtle, but still refreshing.

The Sweet Summer Saga is their summer offering and mixes white rum, curacao, lime juice, aloe vera juice, syrup and fresh cucumber, a healthy alternative some might say!

The cocktails are complemented with a solid wine list (one of the partners was trained as a sommelier in France), and a small craft beer selection as well. There are two Californian craft beers: Cismontane Coulter IPA and Black Market Peach Gose Wheat Salted Sour, which is less sweet than an ordinary fruit beer, and much nicer than it sounds.

As the bar moves out of soft opening there will be themed event nights: Martini night with half priced drinks and Deus Diamonds, a spin on the traditional ladies night. This added with the focus on quality live vinyl music, Deus moves away from the speakeasy vibe and towards a more mature approach to drinking and hanging out.

Happy hour is 5 to 9pm, daily, and is buy one get one free on everything.
