The owner of Buco was born into an ice cream family, and from the age of just 7 years old he starting making his own ice cream! He’s since travelled all over the world opening up gelato shops, and now he’s finally graced us with his presence in Shanghai. The different flavors have been inspired by places all around the world. Who knows - maybe he’ll create a special Shanghai flavor next?! The World of Gelato What actually is it? The concept of gelato is pretty straightforward - it’s basically like ice cream but with a much lower fat content, it’s handmade and allows for a greater variety of flavors to be incorporated. The mastermind behind it all is Salvatore Naselli. His grandfather was also an ice cream-maker, which is what inspired him to go out and do it himself. He’s worked in numerous famous hotels and restaurants, including the Kempinski Hotel, as well as in Italy, France, Switzerland, and the UK. The 4 flavours of gelato available are: Fig Peach Blueberry Chocolate The 4 flavours of sorbet available are: Hazelnut Pistachio Bacio Stracciatella If you like the thick, creamy taste of ice cream, go for the gelato. If you’d prefer something lighter and more refreshing, try a sorbet. This ice cream is seriously, seriously good. Unfortunately though, there’s no way for us to make it ourselves, as it involves a secret ingredient that’s been passed down through the family for generations. Blueberry is the most traditional Italian flavour. It’s made with just three ingredients and nothing else: fresh fruit, water and sugar! In addition to blueberry, the fig, peach, and even chocolate flavors can also be eaten by vegans and those of you with lactose intolerance! Buco also uses flour, grains and other ingredients, all of which are imported from the famous Italian company Pariani. Even a lot of the machines they use are imported from Italy too! Salvatore Naselli has recently been exploring local Chinese vegetable fields looking for inspiration for his special Shanghai creation. If you have a good idea, just let him know!
