New Restaurant: Colca
Colca is one of Shanghai's most anticipated new openings. Helmed by F&B extraordinaire, Eduardo Vargas, they specialize in vibrant and spicy Peruvian cuisine. Does Colca live up to the hype surrounding it? In a word- yes.
THE CONCEPT
Chic with some nuanced Latin flair, Colca is undeniably hip and sexy. The concept is simple: Peruvian cuisine with a hint of Spanish flavor. But before we get to their food... what exactly is a 'Colca?‘
’Colca‘ is a popular place in Peru, well known for its natural beauty and preserved environment. There are many references to the ancestral Peruvian culture- the Inkas - at the restaurant. They want to instill the space with the Colca values of peace and harmony.

STARTERS
Scallop-Chia Tiradito (RMB 98)
Fresh scallops are always a delightful starter to have, but the condiments and sauces used in most restaurants are often a bit predictable. So imagine our surprise to see chia seed sauce matched beautifully with the succulent flesh of the scallops in the Scallop-Chia Tiradito. With a touch of avocado and grilled red chilli, this starter is an exotically nutritious dish to savor.
Ceviche De Colca (RMB 98)
Beautifully carved in a large portion, this chewy, succulent squid is perfect when paired with a dose of their sweet potato and the in-house secret recipe of citrus tigers milk.
MAINS
Brandada (RMB 88)
The Brandada is cod paired with sweet potato and corn. Although simple sounding, the complexity of flavor goes well beyond what you'd suspect.
Prawn Chilli (RMB 128)
With a tinge of spicy siracha on catalan bread, the Prawn Chili is a dish you'll remember long after you eat it. Again, simple ingredients are elevated well beyond expectations with unique flavor and spice combinations.
Clam Quinotto (RMB 88)
The garlic confit and hints of lime give your palette a real Peruvian zest with the Clam Quinotto, which comes served with 3 different types of quinoa as the perfect compliment.
Venison Back Ribs (RMB 98)
Ribs may seem a bit gauche when it comes to making an impression at a dining table, but we assure you at Colca it is not. A plate of Venison ribs with roasted potatoes on the side is a delightful surprise. Roasted beautifully without any unpleasant smell you sometimes worry about with game meats, it's tender, moist and full of complex flavors.
South American Beef Pie (RMB 68)
An all-time homemade nostalgic dish, this South American version with minced tenderloin beef at its core provides all the savory nourishment you need to combat the modern stresses in life... or at least escape from them.
The desserts
Vanilla Caramel Budino (RMB 48)
When it comes to sweet ganache, everyone remains on their best behavior and rightly so, this salted caramel with glanduja crumble brings the fat kid out of us all and gives us that much needed sugar rush.
Lemongrass Parfait (RMB 58)
A cooling dessert fit for the summer, with the aromatic assault of the lemongrass, crunching on coconut ice never felt better than with tropical fruits.

Vodka + aperol + lemon + passion fruit + bitter
Sweet and sour with a touch of passionfruit and orange.

What you should drink: A Pisco cocktail! ( Between RMB 68- 78 per glass) a traditional spirit from Peru which will delicately color your cheek.
What you should eat: The prawn chilli because it's simmered with lobster bisque, seafood on seafood. it is like having all your types in one bed. Cheers!
