10 Dishes That Will Get You Hot for Hairy Crab

For hairy crab fanatics, October is a beautiful time of year when the leaves start to fall and the ice cream stalls turn into hairy crab stalls. Dissecting your own crab to free the sweet white flesh and the golden oozing roe is one of life’s simplest (and messiest) pleasures. However, that is just one of the many ways to enjoy these popular crustaceans lets explore some alternative hairy crab dishes, from this cities top restaurants.

 

Here are some of our favorites:

 

Hairy Crab Burger

Let’s kick off the list with one of the most unique hairy crab dishes around. This hairy crab burger comes in one of Charlie’s signature square buns and contains fresh lettuce, crispy Chinese noodles, an upside down cheeseburger and the insides of nearly two and a half hairy crabs. When you ask proprietor, Charles Zeng, about seasoning he grins and says, “aioli with Chinese spices.” We taste hints of mustard, ginger and vinegar. It’s a juicy, yummy mess and goes well with their seasonal ginger lemonade. Both are available until the end of November. And they have hairy crab fries!

While we much prefer steaming and having our messy crab at home to ourselves, Yong Xing is an economical choice for a delicious pair of crabs for RMB110. Just make sure that you eat at least one female crab as she will be full of vibrant orange, luxurious roe. Dip the yummy crab flesh into ginger infused Zhenjiang vinegar to balance the cooling properties of the crab with warming ginger.

We often enjoy our dinner with glass of wine, but it is not often that our dinner is drunker than us. One notable exception is the classic Shanghainese dish, drunken crab. The live crabs (RMB50 per pair) take a trip to the afterlife on a river of Shaoxing wine with a bit of ginger (again for warming), salt and sugar. The end result is slightly gelatinous crab meat fragrant with the aroma of sweet, fermented rice wine.

Shanghai is the city of xiaolongbao and there are many choices for crab xiaolongbao, but we recommend ever popular Jia Jia Tang Bao for an authentic hit of this quintessential local treat. Each tray is steamed to order and the thin wrappers encase a rich porky parcel marked with vibrant orange roe along with a burst of soupy goodness. While Jesse is a chain spread throughout the city, we insist on the original Laojishi on Tianping Lu. The quality is high and the tiny, rough around the edges 1920s lane house induces visions of Old Shanghai. They have some of our favorite xiefen dishes ever and we especially recommend the hairy crab and potato soup which is a hot, starchy amalgamation of all that is good and delicious in the world. If you still have room, they also do a very tasty xiefen tofu.

Shanghai Chic does this classic Shanghainese dish (RMB 55) with a few modern touches. Even though the fat crabs have plenty of flavor and luxurious roe at this time of year, the dish is enriched with a hint of chicken stock and topped with a handful of crisped rice and scallions. We could eat this dish year round, but it is best from now until December. Lucky for you they have plenty of shiny beautiful locations to get your crab fix.

It's no secret that hairy crab pairs well with carbs and one of our favorite combinations is the golden bowl of noodles at Cejerdary. These noodles are so fancy that they sprinkle a tiny bit of gold flake to accent the resplendent hue of the crab roe. And you will pay RMB 360 for said bowl. Pricey, but you are paying for a small army to pick the meat from a dozen crabs for you. The ideal situation is to share one orange roe and one white meat (RMB 72) bowl to balance the cost and get a taste of both.

The lion’s head meatball is another Shanghainese specialty that benefits from the addition of luscious crab roe. Cheng Long Hang Palace is one of the most upscale locations for a crab feast but at RMB 58 per meatball, this dish is one of the most economical ways to enjoy hairy crab this season.

 

Of course you’ll probably order more than one meatball…

Soft and chewy rice cakes are the perfect vehicle for absorbing the fresh flavors of the hairy crab and accompanying sauce, and Lv Bo Lang does an excellent version of this dish. They have the distinction of being a 2018 Michelin choice for Bib Gourmand and the good fortune of being located in the historical Yu Garden section of the city.

The beautifully restored palatial 1920s house that is Fu 1088 is an opulent environment in which to enjoy the buttery roe of the hairy crab prepared into a stellar xiefen. The crispy wands of brioche beg to be topped with xiefen and the whole dish reaches perfection when accented with sharp droplets of Chinese vinegar.
