First Look: Modern Cantonese Delights at Canton Table

Over at Three on the Bund, they have replaced Whampoa Club (upscale Shanghainese cuisine) with Canton Table, serving modern Cantonese in Neri & Hu designed space inspired equally by the Shikumen of the past and its location on the iconic Shanghai Bund. Upon entering Canton Table, the Neri & Hu touch is unmistakably evident from the details such as their signature modern furnishings to the story being told when viewing the space as a whole.

The view of the river, the Bund and Lujiazui skyline are figured into and complement the design of the main dining room and private rooms. In addition, artworks from the Central Academy of Fine Arts in Beijing adorn the space. The beautiful women in qipao and gorgeous floral paintings fit right in.

The food is created by Executive Chef Eason Man who comes from a long line of Cantonese chefs. He is a very experienced chef with several decades of professional cooking under his belt, so he knows quite a lot about fine Cantonese dining in an opulent space. Not only is Chef Eason good in the kitchen, he’s a people person who can be seen walking around checking with the diners for feedback, which fits in with the excellent service one expects at Three on the Bund.

While the dinner menu has lots big ticket items you expect from this kind of venue such as steamed spotted grouper and chilled mantis prawn in Shaoxing wine, we went at lunch time and focused on dim sum menu. The beautiful wooden dim sum “carts” sit tableside and are used by the servers to distribute food to diners. A small variety of signature dim sum dishes are available at dinner. The deep fried shrimp dumplings with salt and pepper (RMB 39) have lots of pungent crunchy garlic and a spice that, while unusual for Cantonese food, is delicious.

The abalone puff is thankfully available all day, because it is one of the best things we have ever eaten. The abalone is cooked to perfect tenderness and sits in the most wonderfully flaky pastry.  The kitchen has a way with pastry, because we were also blown away by the crust on the black truffle egg tart (RMB 42). The filling of the egg tart mixes savory truffle with a sweet and jiggly egg custard flavored with almond essence. It’s unlike anything we’ve had before.

Any Cantonese restaurant worth its salt needs to have good roasted meats and Canton Table does theirs to absolute perfection. Get a BBQ platter (RMB 198) to sample three different varieties. The goose is juicy and full of flavor with a crisp skin. The accompanying hawthorn sauce is unique. The charsiu is glossy, sticky goodness. Perhaps our favorite, the crispy pork belly has a crackling with a very satisfying crunch and comes with the traditional hot mustard dip.

Another must try dish is the beef flank in clear consommé (RMB 188), one of the chef’s own favorite dishes. The beef with tendons and daikon radish are slow cooked until soft. We love when beef tendon just melts in your mouth and this does that. The dish has lots of flavor from the addition of crispy garlic, cilantro, and chive.

The final beautiful touch on the meal is the sugar artist they have stationed near the lobby. He makes creations big and small and will even create small zodiac candy lollipops for diners to take home as a souvenir of their time at Canton Table. This is sure to delight children and adults alike.

Dining at Canton Table is truly an experience. The food would blow us away in any location, but add in the prime Three on the Bund address and corresponding view and they have struck gold. In the battle for best Cantonese food on the Bund, Hakkasan and Daimon Bistro have some stiff competition.
