Splurge, Save, Steal: Shanghai Steak Guide with DEALS!
There are a lot of options for steak in Shanghai and the prices can be very confusing. Have you ever wondered why you can get a steak at one restaurant for RMB 98, while another place serves it for upwards of RMB 1000? Well, putting aside considerations like rent and higher overhead at big name restaurants, it also comes down to the beef itself.
What is the origin of the product? What is its marbling score? Has it been aged? We have done you a favor and broken it down into three categories: splurge, save, steal.

SPLURGE @ Char
If you want to sample a selection of great steaks, CHAR has a variety that range in price from RMB 488 for an Aberdeen Angus grass fed 250g tenderloin all the way up to huge tomahawks and sharing platters that hover around the RMB 2000 mark. For your splurge, we recommend a unique Robbins Island 100% full blood Wagyu. These cattle are descended directly from Michifuku cattle, one of the most celebrated of the Tajima bloodlines. Morton’s signature cuts: US bone-in ribeye, NY strip and filet mignon

Choose ribeye if you are after a highly marbled full flavored beef experience and go for strip for a less robust, yet tender steak with some chew. Their steaks are wet aged for 23-28 days to retain moisture and are custom cut by experience butchers per Morton’s specifications for high quality assurance.

SAVE @ The Cut
US beef is back in the Chinese market in a big way and The Cut has sourced steaks from The Creekstone Farms, which provides steaks from hand selected Black Angus cattle that was raised and grazed for 450 days in the United States. Black Angus cattle descend from Scottish stock and are very large animals with thicker fat deposits. They will cut these steaks in front of you and they are sold by the gram. Figure in the salad bar and free flow fries and it is quite good value.

At Shanghai Slims, the 14 day dry-aged Prime rib-eye is hands down their best seller. This is an especially good deal when you figure in the normal waste that occurs when dry aging, which usually drives up the prices at steakhouses that dry age. The full meat flavor is concentrated for a steak that really satisfies.
We recommend that you go with a friend and share a larger steak rather than order two small ones. It makes it easier for the kitchen to get that perfect sear with medium rare interior. It also comes with truffled mashed potatoes, broccoli and a port wine demi-glaze making for a complete meal. Of course don’t let that stop you from ordering their amazing lobster mac ‘n’ cheese (RMB 98).

STEAL @ Entrecôte
Entrecôte is named after a particular cut of intercostal meat taken from between the cows ribs. In simpler terms, it is very thin boneless ribeye that can be seared to a perfect medium rare in a matter of minutes; this time window is very precarious and requires extra care in the kitchen. They source New Zealand grass fed ribeye that is seasoned with only salt and pepper to enhance it then serve it in classic steak frites style with all-you-can-eat hand cut fries, French garden salad with walnuts and a top secret herb butter sauce.
Price: 140g (RMB 98), 225g (RMB 158), 280g (RMB 198) at lunch and 170g (RMB 178), 225g (RMB 218) and 280g (RMB 258) at dinner

STEAL @ KRU
Our new favorite wine bar, KRU, has a number of steaks on their menu and we all know how well steaks pair with wine. The tenderloin’s price easily makes it into our steal category. It is Mongolian beef, which allows for the price, and the flavor is especially satisfying after being given a rest, massage and soy marinade. If you a bigger cut, they have a bone-in Australian roasted ribeye that is a whopping 500g which is also a great value. Add a glass of the 2015 Viña Chocalán Cabernet Sauvignon from Chile which is a young, easy wine with low tannins and a hint of chocolate.
