New Opening: Aged Steaks and Huge Burgers at Butchers Club
Shanghai is now home to Mainland China’s third branch (two locations are already open in Beijing) of Hong Kong burgers and beef restaurant, The Butchers Club. In 2013, the business began as a butcher’s shop with private dining room and cooking classes in Hong Kong, before growing into The Butchers Club Burger. Accolades, such as being listed in the street food section of Hong Kong’s Michelin Guide three times consecutively, soon followed.
The restaurant is located in the Shanghai IFC on LG1 near Din Tai Fung and Galleria (which we recently reviewed as well). The space is decorated in a clean, modern style with most things in red and black; similar to their other locations.
The emphasis is on beef and their founder/chef, Jonathan Glover, has a background as a butcher and fish monger. All of the beef for the Butchers Club is dry aged which allows for some seriously delicious steaks and burgers.
Classic Burger (RMB 90)
The classic burger is the best way to judge a burger restaurant and theirs didn’t disappoint. It is perfectly juicy with full flavored beef patty and all the standard additions. Most importantly, the bun can handle all the oozing beef juices without falling apart.
Double Happiness burger (RMB 168) with side of duck fat fries (RMB 28)
Every gourmet burger place needs a big impressive burger and the Double Happiness burger is insane. Two cheeseburgers are stacked between two grilled cheese sandwiches with bacon, pickles, onions, tomatoes and sauce. This is not a joke. While tasty, a sharper cheese would have worked better in the grilled cheese sandwich and the whole thing is way too big to handle alone; so you should probably share this one.
The Hogtown burger (RMB 118)
The Hogtown burger is topped with pulled pork and pea meal bacon for an insanely delicious burger. It might just be our favorite of the bunch.
The Gambler burger (RMB 88)
If you want something different than beef, they do have the Gambler which is a crispy fried chicken thigh smothered in buffalo sauce, topped with blue cheese and a pile of slaw.

If you don’t fancy the bun (low carb alert), then they have a few salads on the menu including this beef and blue cheese one.
Family T-Bone set (RMB 588) serves 2-3 people
And of course they do some really well cooked steaks sourced from a farm (owned by friends of Glover) in Australia. Steaks range from RMB 228 to RMB 568 with choices to satisfy every preference. If you prefer your beef grass fed, go for the filet mignon (RMB 228).
While the prices are above average, bear in mind that outer meat must be trimmed off during the dry aging process which accounts for approximately a 20% loss of product. The aging also takes a long time (20 days in vacuum bags; 30 days dry aged), but the taste is definitely worth it. You end up with concentrated beef flavor and fat that renders seamlessly as it cooks for a succulent burger (or steak) experience. If you care about meat, give The Butcher’s Club a try.
