6 Amazing Spots for Bread Lovers

2018-03-17 Michelle E. ShanghaiWOWeng

Many long-time Shanghai expats recall the days when you couldn’t even find a decent baguette in town. (Gasp! How did they survive?!) Lucky for us, there are now more than enough places to pick up a fresh-baked loaf. We all know about the popular chains, so let’s explore the newcomers and neighborhood bakeries in town.

Avec Toi

This cozy little bakery doesn’t make a lot of noise, but ask any carb fiend and it’s surely on their list of the best bakeries in town. They may not have the largest selection, but they’ve got the basics, including baguettes (RMB 15), sliced pain de mie (RMB 22) and gorgeous crusty rounds of French sourdough (RMB 50). They are also well-known for their pain au chocolat (RMB 18) and fougasse (RMB 17). While it’s mainly a takeaway bakery,

they do have a small hidden balcony, perfect for enjoying a coffee and croissant in the sun.

Bread Etc.

Bread Etc. just opened in 2016, yet it already feels like a Shanghai staple. Their popularity is thanks to Chef Stephan Laurent’s baking expertise, gained from years of working with some of the world’s greatest chefs. What sets this bakery and cafe apart is their three different types of baguettes. There’s the classic French baguette (RMB 18) that we all know and love; the Tradition (RMB 18) which is closer to the original 1920’s recipe for baguettes; and their newest iteration, the FFC (RMB 18), which is a softer, more pliable bread.

la Boulangerie et Patisserie

A bakery from the legendary Pierre Gagnaire, alongside le Comptoir de Pierre Gagnaire in the Capella Hotel. This place is French through-and-through; Executive Pastry Chef Clément Ayache insists on using French butter and flour, complimented by the best in-season local ingredients. I know what you’re thinking: French, imported, and in a fancy hotel - it’s gotta cost a month’s salary for a baguette, right? WRONG. Prices are on par with other bakeries around town, which is a steal for this level of quality and deliciousness. They bake bread up to three times daily - with any luck, you’ll be there right when the crispy fresh baguettes (RMB 16) or fragrant loaves of ciabatta (RMB 26) come out of the oven.

La Parisienne

If you are French and you live in Pudong, you know La Parisienne. It’s a one-stop-shopping destination for anything a French person could possibly need. Watch the bakers shaping dough in the kitchen behind the counter, which is laden with all manner of baked goods, including breads, pastries and desserts. Try the epi baguettes (RMB 16), which are cut to look like stalks of wheat, or the super-affordable croissants for a mere RMB 11. They also stock a selection of cheese, charcuterie, wine, even baking ingredients! As if this wasn’t enough, you can also sit in their cafe for coffee, pastries or light lunch items.

MBD

The bakers at MBD blend classic French recipes with Japanese dedication. Word is the head baker, Hiroaki Homma, has kneaded dough at some of Shanghai’s favorite bakeries, such as the dearly departed Farine. This tiny storefront bakery has a cool aesthetic yet still feels like a homey neighborhood spot. As we browsed the French classics, we were immediately enticed by the burnished crust of the pain de campagne (whole RMB 40/half RMB 20). We also like the “snack size” items like the petite baguette (RMB 10) and petite croissant (RMB 4) for when we need a hit of carbs, but don’t want to deal with the guilt of gobbling down a whole loaf of bread.

Spread the Bagel

While Shanghai has almost everything a carb-lover could want, one thing that is hard to find is a good bagel and shmear. Enter Spread the Bagel, which rolls out New York-style bagels for the homesick masses. Each bagel goes through an 18-24 hour process, which includes boiling before baking to give them that delectably crispy exterior. STB makes all your favorite bagel flavors from back home, including Everything, Onion, and Cinnamon Raisin (RMB 12 each). They’re also known for their Bagelwiches (RMB 30-68), which have been clinically proven to cure hangovers.
