Explain Your Cocktail: The Oddly Delicious Bowl of Umami

Welcome to our new series: Explain Your Cocktail, where we invite bartenders from around the city to talk about one of their favorite or most unique menu drinks. In this week’s edition, we’re taking a look at a bizarre but oddly-delicious drink that lists 'dried fish' and 'tofu foam' among its many ingredients. The Bowl of Umami is the brainchild of Datou, the Bar Manager at The Bunker By Flask. 


A Bowl of Umami - Dried Fish and Prune Infused Apple Vodka, Rice Wine, Carrots, Porcini Syrup, Lemon, Tofu Foam (RMB 95).


Explain your cocktail:


“The umami flavor is considered to be the 5th major one in addition to sour, sweet, bitter, and salty. This has become a really popular concept in Asian countries, especially Japan. Umami is used in many dishes as a sort of finishing touch flavor. My goal with this drink was to offer a bit of an Asian, food-inspired drink that had some of those big flavors without overdoing it. I think this drink does that really well in a way that's accessible and fun."


About the bartender:

 


Taiwanese drink wizard Datou is the Bar Manager at The Bunker by Flask. She’s won numerous awards, including the Diageo World Class Taiwan Punch Challenge, and was the supervisor of Woo Taipei, a reputable bar that has been included in the Asia 50 best bar list.
