Joël Robuchon Opens New Restaurant Inside Reel Mall

ShanghaiWOWeng 2018-11-30

L’Atelier de Joël Robuchon at Bund18 has been a star in Shanghai for quite some time already, and the world-famous French chef is blessing our fine dining scene with his brand new restaurant Le Salon de Joël Robuchon at Reel Mall in Jing’an!

At just a third of the price of L’Atelier on the Bund, you can still enjoy Michelin-quality cuisine without breaking the bank.

Le Salon de Joël Robuchon makes its debut in Jing’an

Joël Robuchon has finally opened the doors of his brand new restaurant Le Salon de Joël Robuchon after a lengthy preparation and design process, and it doesn’t disappoint. His iconic visual elements remain present with a red and black color scheme that embodies authentic French luxury and romance to perfection.

Unlike the more upscale restaurant on the Bund, Le Salon offers a more relaxed atmosphere while maintaining high-quality food at the core of its fine dining experience. In addition to regular business lunches, afternoon tea sets and dinners, the new restaurant dedicates an entire wall for its selection of great wines from all over the world that you can enjoy either at the dinner table or from their gorgeous lounge that adopts a red interior and theater-like decor.

There’s also a secret outdoor dining area at this prime commercial district of Jing’an that makes for a great place to unwind in the summer. But shhh, don’t tell anyone.

Unwrapping the menu at Le Salon de Joël Robuchon

RMB 400 per person to appreciate Michelin-quality cuisine.

Joël Robuchon’s new restaurant is managed by the Executive Chef from L’Atelier, so expect to find pleasant similarities between this menu and the one on the Bund.

Le Caviar: RMB 288

His signature caviar is very impressive and meticulously served with king crab in such a way that screams high quality. The salmon caviar is also served in a very particular manner. The caviar box has four layers: imperial caviar, king crab, crustacean jelly, and cauliflower cream, but don’t forget to use their special pearl shell spoon for the caviar as the metal helps oxidize it.

Le Foie Gras: RMB 178

This foie gras is made with duck liver as opposed to the usual goose liver used, but don’t let yourself feel put off by the replacement of ingredients because duck foie gras is actually lighter in both taste and fat compared with goose foie gras. The muscles are removed from the liver by hand, steamed at just 65 degrees Celsius, and then seasoned with salt and pepper. Le Foie Gras comes with a grapefruit and green apple sauce to create memorable bites of pure joy.

La Dorade: RMB 128

Scallops are served with a lemon sauce and turmeric cream, and sprinkled with paprika and scallions. Rich and delicate at the same time.

Magnolia salad with crab, avocado, green apple and lemon juice: RMB 128

This magnolia salad is nothing short of exquisite. The avocado is used as its base for a rich taste and followed by the addition of deep-ocean Alaskan king crab meat. The slighter bitter magnolia compliments the sweetness of the crab.

Mini summer radishes with natural sea salt: RMB 48

These cute little summer radishes are served with a buttery sauce and radish leaves, and can be seasoned with a bit of British Morton sea salt as well.

Gilled beef steak (M3) with tourmaline mayonnaise and French fries: RMB 398

Joël Robuchon doesn’t mess around when it comes to serving meat. His freshly grilled Australian beef steak weighs 300g which makes it the perfect main to share, and comes with a side of either salad or mashed potatoes.

The steak is grilled at high temperatures to capture all that delicious beefy juice, then comes out charred on the outside and tender on the inside.

L’Agneau: RMB 258

The same New Zealand lamb chop used at L’Atelier on the Bund is served here. The meat is lovely and lean without feeling too heavy in fat. The secret is to add the sauce only when cooking temperatures reach 72 degrees Celsius for a wonderful, tender lamb dish.

Roast yellow chicken with vegetable salad and classic mashed potatoes: RMB 128

Joël Robuchon has always based his recipes on the original flavor of their ingredients, and he particularly enjoys learning about quality dishes from local cultures in order to adapt them for his own restaurants.

Only with consistently high standards has he been able to create such incredible dining experiences, and those are exceptionally high when it comes to selecting good quality chicken. They must be raised in a free-range environment and weigh no less than 1.2kg so as to ensure the perfect ratio of lean meat and fat. They are then roasted for 35 minutes in an oven that’s been imported from France specifically to roast chickens, and ultimately served with a delicious sauce.

Le Black Cod: RMB 238

The fish is soaked in a variety of seasonings such as olive oil and ginger two days in advance, and popped on the grill once all the flavors have seeped into it. It’s served with a layer of radish underneath and tastes absolutely delicious and fresh.

Crème Brûlée: RMB 68

This is a traditional French dessert baked at 105 degrees Celsius for 45 minutes to create a crispy and fragrant outer skin that covers a sweet and creamy pudding inside, and is served with top-quality whipped cream.

Le Riz Rond: RMB 58

This is another traditional French dessert that comes with a layer of crispy, caramelized peanuts under which hides Tahitian vanilla ice cream and Thai rice cooked in milk, cream and herbs - all coated in a caramel VSOP sauce.

This dessert is a show of how meticulous its preparation is. The rice used must be basmati rice and cooked at a precise temperature for a perfect balance between soft and hard, or else it will be ruined. Only experienced and highly talented chefs in restaurants like Le Salon and L’Atelier can get this right.

If you’ve never tried rice pudding before, this one will surely blow your socks off.

Le Café: RMB 68

The ingredients used to make it are basically the same as in a classic Italian tiramisu, which include Mascarpone cheese and ice cream to give the coffee a rich flavor.

Fresh mango and coconut: RMB 58

This dessert is made up of an exquisite crunchy honeycomb, coconut sorbet and mango mousse accompanied by a variety of tropical fruit jams and frozen strawberry pudding. Perfect for our hot and humid summers.

All-Day Dining

A 360-degree immersion for your taste buds.

Aside from the incredible lunch and dinner menu that Le Salon serves, you can also enjoy afternoon tea and fine wines to immerse yourself in an entirely different but equally-memorable experience.

LVMH Group’s world-class Veuve Clicquot champagne is also a co-brand of Joël Robuchon’s restaurants globally, so you can expect a vast array of special champagne and food pairings from the chef. There are two types of Veuve Clicquot champagne available at Le Salon: Brut (RMB 1,180 per bottle) and Rose Brut (RMB 1,380 per bottle), both of which are offered with a 50% discount from 6pm-10:30pm until May 31st.

If you’re not in the mood for bubbles, you have a great selection of incredible, reasonably-priced cocktails to choose from as well. We recommend pairing your Gin with either the herbal tonic or the romantic tonic - both elegant and light. There are two cocktails in particular that you and your partner should try (should you be on a date): the Snow Master 白雪至尊 which is made with coconut butter, and Ginger Town 姜之镇 for whisky lovers.

In order to meet the lunchtime needs of business elites working in the vicinity of Jing’an, Le Salon offers a lunch set for RMB 188 from Monday to Friday that includes one appetizer and an entree, or dessert. Excellent value for your money!

The quality of the restaurant’s afternoon tea desserts is always carefully double-checked by their respective chefs. Tea sets come with seasonal fruits and are served with either three tiers or a single dessert.

And as if the restaurant in itself wasn’t enough, Joël Robuchon has pleased us with the opening of the same bakery that you can already find on the first floor of the Bund branch with all kinds of fresh-baked breads and other mouth-watering pastries! None of them contain preservatives so make sure to eat them the day you buy them, whether it be on your way to work or after lunch at Le Salon.
