Dine with 6,000 Fish at Shanghai's First Underwater Restaurant!

After 12 years, the quarry hotel - also formally known as the InterContinental Shanghai Wonderland - finally opened and with it comes the opening of Shanghai's first underwater restaurant.



Located 15 levels below ground at -88m, the project cost around RMB 20 million to create the circular fish tank and diners are now able to dine with 6,000 sea creatures.



Bringing our dreams of living like Aquaman to life, the beautiful setting is coupled with seafood-based fine dining for what should be an unforgettable dining experience.




Discover the underwater world

70 species of sea creatures and 6,000 fish



Taking 12 years to build, the hotel has levels that are both over and underground - two of which are underwater.





The water found here is actually taken from the South China Sea 200km away - specially transported to the hotel - and filled with 70 different marine life species and 6,000 fish.



Located 15 floors underground, the underwater restaurant Mr. Fisher and the other suites are built around the large fish tank, allowing diners and hotel guests to live and dine with their favorite marine life. 



Taking three years and RMB 20 million to build, the maintenance of the fish tank and its aftercare will pose a big challenge to the team due to its low sea levels and rich biodiversity.



Unveiling Shanghai’s first underwater restaurant

Four key highlights


Glass observatory deck and underground maze 15 floors below



The hotel has four transparent glass lifts which overlook the beautiful waterfall and diners can appreciate this while making their way to Mr. Fisher restaurant.



Upon exiting the lift, they will walk through a maze-like corridor where a black and gold fashion-forward design leads to the underwater restaurant.


Private and exclusive VVIP room

Best sights in the hotel




Passing the restaurant’s main hall, we made our way right to the VVIP room, which has the best views for fish watching in the entire hotel. Sitting up to 16 people, the room sees many different marine species swim by over the course of the meal.



Hidden in the dark corner was a stingray, which we managed to say hello to!



The ceiling is decorated with a shoal of crystal fish, which complements the blue fish tank perfectly in terms of aesthetics.



While the walls are decorated with stars, giving it a romantic vibe.



On a daily basis, the caretakers feed the fish and ensure that they are in the best of health. If you’re lucky, you might even be able to see just how they take care of them. 


Fine Dining Hall

A dreamy dining experience




If you don’t manage to get into the VVIP room, opt to dine in the main hall which sits up to 60 people. The dim lighting creates a wonderful fine dining atmosphere and diners will be able to appreciate the different marine life.



The sofa area has a different take on modernity with marbled tables and soft sofa seats that can be placed together for easy group dining.



For a banquet, the restaurant can sit up to 100 people and will suit any important occasion you might want to plan.


A Seafood Feast Unlike Any Other

An exquisite experience



When visiting, we bumped into Executive Chef Rolen Chao, a chef from Taiwan with over 13 years of experience in Spanish cuisine. Hoping to create a high-end restaurant, he wants the place to be known for its great food and not just a beautiful view.


Taiwan-Style Gillardeau Oysters 



The Rolls-Royce of the oyster world, the team tries to reinvent the wheel and creates a new way of eating the Gillardeau oysters.



The oysters are topped with Aiyu jelly and Yuzu vinegar, creating a rich and fine textured dish with sour, sweet, fresh and aromatic flavors.


Beautiful Alaskan Toothfish 



Plated to look like a painting, the Alaskan Toothfish is air flown in and is served with soybean crisp, cherry tomatoes and more.


Fruity Pan-Fried Alaskan Flatfish



Air-flown in, the Alaskan flatfish has springy and fresh meat that's accompanied by dried kumquat, stewed citrus fruit and fennel, and okra, giving the dish has a fruity and balanced flavor.


Steamed Grouper



A common dish from Taiwan, the grouper is tender and fresh and its flavor is enhanced with savoury winter melon and crab flavored mushroom.



The dish is layered with crisp seaweed on top and simply melts in your mouth.

 
Grilled Atlantic King Salmon



Grown in the Atlantic Ocean, this rare species of salmon has a tender and soft meat with a slightly sweet taste. The salmon is wrapped with squid and baked with risotto that has been cooked for 16 hours. Topped with squid sauce, this lovely seafood dish has an aromatic chicken broth and fresh seafood flavor.


Carousel Dessert Display



No dinner is complete without dessert, and the dessert here is served slightly different from the rest.


At dessert time, the dessert chef pushes out his creation and unveils it to reveal a carousel dessert display.


Desserts include raspberry mousse, American hazelnut coffee cake, chocolate molten lava cake and more.


Chocolate Molten Lava Cake



Crack the chocolate cover open to reveal the molten chocolate and blueberries inside! This dessert is definitely not for those looking to maintain a healthy diet!


After the meal, we continued to gaze at the beautiful marine life swimming peacefully before us. The only downside is that the fish tank does not provide a 180° view...Nevertheless, we were thoroughly satisfied and treated to a wonderful meal.
