Paul Pairet’s Xintiandi Polux is an All-Day Dining Hit

When one thinks of Paul Pairet, immediately you will think fine dining. After all, he is the most definitive F&B chef in Shanghai with his Michelin three-starred UV and his iconic Bund brunch at Mr & Mrs Bund. With his newly opened all-day dining restaurant in Xintiandi, Polux lets you discover another side of Mr. Pairet.



Named after his childhood nickname, Polux is a French-styled cafe focusing on all-day dining. This is Mr. Pairet’s first venture into all-day dining, and in comparison to his past restaurants overseas and in town, Polux is by far the simplest. In decor and food selection.



How did the idea of Polux take shape? Taking over the former KABB location, Mr. Pairet felt the environment especially the terrace is one of the attracting points to create a café. Especially in bringing people to enjoy the relaxing atmosphere of Xintiandi



What can you expect at Polux?  Expect a light and refreshing atmosphere with French styled comfort food that’s simply made but with substance and complex flavors. All the décor has a function, nothing that distracts from the dining atmosphere.



Unlike a bistro, cafe style dining features food that are prepared light. All the dishes here are portion controlled and there is a lighter use of butter.  If we need to sum it up, the menu is diverse and efficient with an emphasis on small plates.

However, when you come to Polux you need to understand something about Mr. Pairet. He is an egg lover. So, expect many dishes to include eggs.

With an all-day dining concept, food has to be prepared and served quickly. So the main courses are very straight forward. Don’t expect complex plating or fanciful presentations. For example, the duck confit is presented simply on a white dish with mushroom on the side. But, the taste is just exquisite with the meat super tender as if it is about to melt in your mouth.

Grilled Ribeye with Mash and Beef jus is also very simply prepared. A slab of meat in contrast to a super white mash. But once in your mouth you can taste the tenderness of meat in contrast to the simplicity of the mash.

You can’t have all-day dining without a burger. And although the burger at Polux may look unimpressive, the complicated aroma will hit you before you even get to taste it. And once you have a bite, you will feel the flavors of pepper, chili and mustard bursting in your mouth.

And nothing screams casual dining more than a sandwich. His double decker club sandwich with bacon, chicken, tomato is compact with vibrant with textures.

How about the drinks? You can expect wine and cider on tap as well as some of the signature Bocktails that was such a hit from his former Chop Chop club.



And no meal, or afternoon tea is complete without refreshing desserts that ends your experience at Polux on a high note.

The rum soaked brioche soaked in rum topped with a fresh vanilla creme allows you to carry over the succulent tastes over from the mains to the dessert.

The French toast has a crispy caramel shell allowing you to taste a super soft and almost creamy textured bread center.

Cooked raspberries with Sherry vinegar, sprinkled with salt and pepper mixed with fresh cream and burnt butter is an excellent wholesome and refreshing dessert that provides a lovely ending to a fantastic meal. Another great refreshing dessert is the Mango-Earl Granite, with its sweet and tangy aftertaste does well to cleanse the palate of a lovely meal (even though we prefer to have the memory of the food linger longer).

How do we enjoy Polux? Comparing this to his other ventures, the food coming out of the kitchen here seems closest to the type of food Mr. Pairet will serve at home in his own kitchen. And if you are a fan of his, this is one of the places you will be sure to return again and again.
