The high-end Japanese food industry has always been a competitive scene in Shanghai.

The newly opened Japanese food restaurant’s owner, Nolan, is a Shanghai returnee born in the 90s. He comes with the experience at a local Michelin restaurant in Japan.
A High-end Restaurant that Serves Sushi
The name “Yuusawa” means abundant in Japanese. It is also the name of Nolan’s new Japanese restaurant in Shanghai that has been officially opened for only two months.
A place that only serves sushi, Yuusawa is a Japanese restaurant with an average of RMB 2,000 + per capita.
Nolan studied in the United States for seven years and is now working in the financial industry.
His love for Japanese food started when he was studying abroad. He has tasted more than 100 Michelin Japanese food restaurants.

He studied the famous dishes from these restaurants and handpicked the best among them before learning and developing the menu with his restaurants’ chefs.
And finally, Yuusawa was born.

The restaurant is divided into four areas: a main bar seating area for 12 pax, a tatami room for 6 pax, a Japanese whiskey bar for 8 pax, and a wine cellar-themed private room for 12 pax.
It incorporates natural wood color into its overall design.
The sushi bar is made of 100-year-old cypress wood, and the chairs are made by a Danish designer.
Almost all the chopstick rests, plates, teacups, and wine glasses in the store are flown in from Japan.
Tatami private rooms are suitable for small business meetings or catching up with friends.
The luxuriously equipped wine cellar-themed private rooms and a Japanese whiskey bar offer great surprises to guests.
RMB 2000 per pax
Yuusawa's sushi is presented in an Omakase format and is prepared by Chef Jin. Each set retails from RMB 1,980 per pax and includes seven dishes and nine pieces of sushi.
You can take a bar seat and watch the chef carefully prepare the dishes.
This shop attentively selects premium ingredients for diners. The cost of the ingredients makes up 40 – 50% of the set price.
The wasabi used by Yuusawa is fresh wasabi from Shizuoka Prefecture, with a purchase price close to RMB 4000 /kg.
Sushi rice, soy sauce, vinegar, and other sauces are purchased at a high price from famous Japanese restaurants.
Authentic Flavors from the Lightly Seasoned Cuisine
Anglerfish Liver
The dining adventure starts with an anglerfish liver. The anglerfish used is from the Hokkaido Toyoura-Funkawan area.
Take a bite and enjoy the liver melting in your mouth.
Snow Crab
The snow crab dish uses crab egg at the bottom, followed by a layer of crab leg meat, and is garnished with roe on top.
Dig in with a spoon and enjoy the sweet flavors.
Raw Sujiko
Raw Sujiko is made from salmon roe harvested from the Aomori Prefecture, and they pack distinct flavors.
Chawanmushi is paired with a 9-year-old Lanzhou lily and served.
Roasted River Eel
The wild river eel has crisp skin and tender meat.
The eel has a shine to it and a full-bodied flavor.
Elegant Sushi
Good rice is the soul of sushi.
After trying countless types of rice, Yuusawa finally chose Hokkaido Nanatsuboshi and Koshihikari rice. The two are mixed in a fixed ratio.
The rice is packed into a fan shape using the chef’s palm.
Sushi shaped from the palm adds a special touch to the dish.

The combination of sashimi and rice creates the perfect-tasting sushi.
The main ingredients are made into a puree, stirred well, and cooked to create Tamagoyaki.
The preparation takes around four hours.
Making a good Tamogayaki takes a chef ten years to master.
Owner’s Private Collections
The wine cellar-themed private room named Ming Club can accommodate 12 pax.

The equipment from Ridel and the drinks in the wine cellar are worth millions.
The Japanese bar here is YUUSAWA·M and is open until 1 a.m.
The wine cabinet is full of precious spirits, and each one is worth a fortune.
The cocktail retails for RMB 188, and we highly recommend diners to try it.

the restaurant only serves dinner.
Lunch is estimated to serve after CNY.
The price is about 1280 RMB per pax.
Special theme banquets,
such as full sushi banquet (2980 RMB per pax),
sea urchin banquet (2980 RMB per pax) and private customized sets,
are available for groups (minimum 6 people).
