Winning the 1-Michelin star in Tokyo for four consecutive years, the famous Japanese ramen brand has opened its first store in Chinese Mainland. After 16 years, the popular ramen brand, which had swept Tokyo and Hong Kong by storm, is now at Shanghai IFC Mall.

This winter, Konjiki Hototogisu opened its first store in Chinese Mainland in Shanghai.Konjiki Hototogisu in TokyoThis ramen restaurant, founded in Shibuya, Tokyo, in 2006, is managed by Chef Atsushi Yamamoto and has won the Michelin "Bib Gourmand" for four consecutive years from 2015 to 2018.It was awarded as 1-Michelin Star for the first time in 2019. Since then, it has been listed as a "Tokyo Michelin One Star Restaurant" for four consecutive years.At the age of 26, Chef Atsushi Yamamoto switched from a career in construction and ventured into the world of ramen. Konjiki Hototogisu has been voted as Japan's Best Ramen by the Japanese restaurant reviews site, Tabelog, for seven years in a row.Konjiki Hototogisu outlets in Hong Kong, Singapore, and Canada are incredibly popular.The brand is now setting out in Shanghai.
First Store in Chinese Mainland

For it’s first store in Chinese Mainland, the brand has selected to open it at the Shanghai IFC Mall.As part of it’s design, the brand has included various cuckoo décor around the store.The interior of the store is decorated with gold, brown and concrete color. And there are more than 10 car seats in the room.The gray and white decoration on the main wall in the background is a photo of bird’s wings.Five New Ramen Flavors No MSG Added
Apart from locally sourced vegetables, the rest of the ingredients and recipes are taken from Japan.Ramen, condiments and more are flown in and freshly prepared.The clam soup base, created by Atsushi Yamamoto, is freshly prepared everyday. Guests are able to see the cooking and preparation process on the side when dining here.The clear clam soup with fish and pork bone broth does not use any MSG and has an amazing taste.The Shanghai store launched 5 new ramen flavors, which are Shio Hamaguri Soup Ramen, Shoyu Hamaguri Soup Ramen, Tonkotsu Smoked Pepper Ramen, Tonkotsu Spicy Ramen, and Tonkotsu Original Ramen.The store’s signature is the clam soup base, and there are two options, shio or shoyu.Taste the freshness of the seafood in the Shio Hamaguri Soup Ramen, which is topped with porcini sauce and white truffle oil before serving.The noodles are made of six kinds of flour imported from Japan, and the flour brand "Spring Love" from Hokkaido is exclusively used by Konjiki Hototogisu.There are two kinds of meat in it - pork belly cha shu and slow cook cha shu.The ramen blends three herbs, shallots, and fried minced bacon.Shoyu Hamaguri Soup RamenThe Shoyu Hamaguri Soup Ramen has a lovely rich flavor with black truffle sauce in it.
