Boris, Lamb and Hiroshi Fujiwara traveling together
Around three years ago, Boris was inspired in his conversation with Hiroshi Fujiwara to combine food and fashion.
Boris and Lamb
Therefore, Boris and his partner, Lamb Wool, creates this "multi-brand style" restaurant, inviting restaurants from all over the world to come together for a pop-up.
The name ØSP reprensents "omakase+savour+pop". The interior is divided into three separate spaces: the dining area features an Omakase menu, the Lounge provides snacks and cocktails, and the POP space is great for dinner parties.
Hiroshi Fujiwara manages the visual elements and design of the overall space.
Black, white, grey and olive are used as the main colors.
All the details presented in the space are decided after discussing with Hiroshi Fujiwara.
ØSP is not fine dining but fun dining. The chefs invited to collaborate are old friends of the founders, and they set no limit for menus.
The ØMAKASE space provides seasonal menus by world-famous chefs. The first quarter is the delicacy from DEN, a Michelin two-star restaurant in Tokyo that holds the top spot in Asia's 50 Best Restaurants in 2022.
Zaiyu Hasegawa and his pet Puchi
Zaiyu Hasegawa, the chef owner of DEN, designed the menu personally.
The 8-course menu includes multiple chef's signature dishes, priced at RMB 880 per person and limited to 12 people per day.
It is impossible to retain 100% of the taste from the restaurant due to ingredients access, but the menu retains the brand’s essence while adding a Chinese flavor to it.
Foie Gras Monaka
Monaka is a Japanese wagashi with red bean filling, and DEN changed the filling to white miso foie gras and chestnut puree and added pickled mustard for seasoning.
Seasonal Salad
The vegetable salad is one of DEN's signature dishes, combining various cooking methods such as pickling, frying, and roasting.!
Dentucky Fried Chicken
Dentucky Fried Chicken is a spoof of KFC with its unique flavors.
Puchi Pudding
The pudding that only regular customers can eat at DEN is available on the Omakase menu this time.
