Confucius Mansion "Three Ingredients" Soup
Shang Garden at Futian Shangri-La Shenzhen has invited the culinary team from Shangri-La Hotel, Qufu to present the authentic Kong (Confucius) family cuisine from 22 May to 4 June 2017. Guests can experience the best quality food and service, and the profound essence of Chinese culinary culture.
Farm-Style Pancakes Served with Four Kinds of Condiment
The Kong family cuisine, tradition passed on through many generations, is a combination of Shandong regional Lu methods and Su cuisine from the south of China, prepared with unsparing attention to the ingredients, appearance, taste and shape. The dish names allude to auspicious meanings. Influenced by the imperial Ming (1368–1644) and Qing (1644–1912) dynasties, the Kong family cuisine centres around elaborate banquets, royal commemorations and religious ceremonies.
The Kirin Imperial Book
To showcase the uniqueness and the essence of the Kong family cuisine, the hotel has invited Chef Huang and his culinary team from Shangri-La Hotel, Qufu. Together with the culinary team, Ms Kong Chen, the 75th generation of Kong granddaughter, applies Shangri-La cooking methods to the traditional dishes, and members carefully oversee the selection of ingredients, the precise cutting skills, the cooking process and the control of heat levels to bring modern flourishes to the Kong family dishes.
Wisdom Frees Perplexity
Lu Wall’s Hidden Collection, also called the Prawn Roll wrapped in Crispy Vermicelli, uses noodles and shrimp meat. In 221 BC, the Qin unified six states and introduced the policy of burning books and burying Confucian scholars alive. The ninth generation of Confucius Kong Sun Fu hid their books in the wall of Confucius’ house to avoid the disaster of destroying all this knowledge. Classic books, such as The Ritual, The Analects of Confucius and the Classic of Filial Piety, were preserved.
Lu Wall's Hidden Collection
Another typical Kong family dish is The Kirin Imperial Book. The dish is commonly made with freshwater bass, but the Shang Palace chefs select seabass as its scales are rich in nutrition and it is shaped like kirin once fried. A special recipe as marinade is created for the fish before cooking.
“Gingko” Poetry Rites
Gingko Poetry Rites is a dessert of steamed snow pear stuffed with red dates and gingko nuts. Confucius said, “No Speech-No Poem; No Etiquette-No Independence”. The 53rd-generation Kong Zhijian built the Poetry and Etiquette Hall near Confucius’ former residence to honour Confucius and planted two gingko trees. The gingko in this dish comes from these trees.
“Six Arts”Cold Appetisers
Shangri-La’s Kong Family Cuisine Menu embraces tradition with such items as Peasants’ Harvest (farm-style pancakes served with four condiments), Wisdom Frees Perplexity (braised pork ribs stuffed with spring onion stalk) and Lu Wall’s Hidden Collection (prawn roll wrapped in crispy vermicelli). In addition, based on Confucius’ six arts, the hotel introduced the contemporary Six Arts Cold Appetisers (Rites – Spiced Beef Shanks; Music – Jellyfish Salad; Archery – Spiced Duck Tongues; Chariot Racing – Sea Whelk Jelly Salad; Calligraphy – Scallop and Lettuce Salad; and Mathematics – Osmanthus Honey Red Dates.
Shang Garden Chinese Restaurant invites guests to enjoy a selection of a la carte or set menus. Specially chosen Taishan Maiden Rosé Tea and Kong family white wine that complement the unique style of food will also be served.
