Italian Executive Pastry Chef Francesco Mannino at The Langham, Shenzhen Pays Homage to An Indulgent Afternoon Tradition
Francesco Mannino, the resident Executive Pastry Chef of The Langham, Shenzhen hails from Italy, where romance comes naturally. Nurtured by his family, Francesco gradually explored his own interest and talent for pastry making. In order to pursue this vocation, Francesco went to college in London and Paris. It has now been over 15 years since he stepped into the pastry field.
When asked about the secret to creating a perfect dessert, Francesco’s answer is “perseverance”. Years ago, Francesco worked in the world renowned pastry shop Pierre Hermé in Paris. For the first two months he repeated the simple task of sifting flour on the top of macaroons, then spent another six months learning how to make a macaroon, and a further six months developing his skills in chocolate making. It is this meticulous practice that creates the perfect representation of his artistic skills.
In the course of his career mastering the sweet art of desserts, this adventurous chef has travelled from his native Italy to create tea-time specialties in Mandarin Oriental, London and Four Seasons Hotel Beijing, serving as Executive Pastry Chef. Francesco believes that desserts are like music and books, in that they trigger one’s emotions. A piece of cake may take you back to a time of happiness, or help to unwind stress after a frantic day.
With a menu of fresh seasonal produce and the finest traditional ingredients, the debut “Summer Selection Afternoon Tea” is made from an abundant array of fresh fruits and seasonal berries. With refined presentation, the desserts will definitely give your palate a surprise. These include the lollipop with savoury peanut, the blueberry pie filled with creamy cheesecake, and the chocolate éclair paired with refreshing cranberry and rose, just to name a few.
