Classic Western Food in Seaworld

In the last write up, we dug deep into a well-kept secret about Terrace in Shekou’s SeaWorld. Terrace is more than just an entertainment hub with great live music and drinks but has quite a few hidden secrets in their kitchen. When Terrace started their concept of music and drinks, they found themselves with a large kitchen owned by the previous tenant - a Japanese restaurant. With a kitchen ready to go, they decided to bring in a group of Thai chefs to run the kitchen and in doing so, ended up with an extremely authentic Thai menu featuring ingredients imported directly from Thailand. 


Their Thai menu is a hidden gem that most are not aware of when thinking of Terrace – but there is yet another story to tell about another part of Terrace’s menu.

 

After finishing up their Thai menu and being very happy with the way it turned out, Jon, one of the Terrace founders, and his partners realized that not everyone is a Thai fan or in the mood for Thai dishes everyday. This set them on a course to figure out what kinds of other dishes they could add to the menu that would cater more to the Western crowd. 


After putting out the word that he was looking for help with Western food, Jon found out one of his friends had connections with a chef in New York who could come and help to design a Western menu for Terrace. 


As he found out more about this visiting chef, he was excited to learn that the NY chef was formerly P-Diddy’s personal chef, Jerrome Abustan, who studied at the prestigious Culinary Institute of America, just happened to be the Executive Chef for NY City's Club Metropolitan, where he regularly cooks for the likes of US presidents, international politicians, corporate CEOs, and Hollywood stars like Brad Pitt and Angelina Jolie.


 

Jerrome consulted at Terrace for about three months and molded their Western Menu leaving them with a pretty amazing variety of Western dishes including a few with a unique Thai-Western fusion twist.  Diving into this menu, the first dish I previewed was the herb-fried chicken wings. 


Jon originally wanted to do a fried chicken wing served with a honey mustard but ended up with a fusion style fried wing served with a Thai dipping sauce. You can’t go more Western than chicken wings really but these wings have a unique Thai twist. 


The wings are seasoned with a dry rub of ground coriander and Thai herbs and come with a mayo and Thai sweet chili dipping sauce.

 

Secondly I wanted to check out some of the salads. If you are looking for a healthy lunch option, it’s good to check out the salad concepts at Terrace. The first salad I tried was the Shrimp Caesar Salad. 


This salad was made of Romaine lettuce, a Caesar dressing that is made in house and grilled shrimp. I would say, what makes this salad really pop is the shrimp. They are very large, beautifully seasoned and bring a great flavor to the salad.


The next salad I really loved was the Spinach Salad. This is obviously because I am a huge lover of spinach and every American ought to be a lover of bacon (I say “ought” to be so don't kill me if you’re not).  One thing I am not a fan of, however, is vinegar-based dressings. 


I usually like my salad to have a cream-based dressing such as Caesar or Ranch. That said, somehow this salad won me over to a vinegar-based dressing. The salad had an amazing taste mixing the spinach with a hearty amount of crispy bacon, sliced red onion and a light lemon vinaigrette that is also made in house.

 

Next, if your going to have a Western menu, you have to have sandwiches and hamburgers and Terrace made sure to add both to their Western menu. 


When you think Club Sandwich, you’re probably thinking something dry with a few slices of meat, cheese and lettuce - at least that's how I see it. 


When I was asked to try the Terrace club, I was a bit “iffy” about it not knowing if it would be something to write about. I was gladly mistaken after the first bite. This sandwich is made with the usual bacon, lettuce and tomatoes but uses a grilled chicken breast and is topped with a unique sauce and served on a butter-toasted bread.  


I cant figure out what makes this sandwich so good – it’s either the chicken that's been done very well or the amazing sauce or both. One thing is certain - it’s definitely not your usual tasteless club that you get from hotels. If you’re a sandwich fan, definitely try this club sandwich, you won’t be disappointed.

 

Another staple food in western menus of the world is the burger. The Terrace burger is made with flavor in mind by grinding their beef in-house and adding a special blend seasonings to create a burger that is both juicy and flavorful. 


The burger is served with a pickle spear and some of the best fries I’ve had in Shenzhen- which really makes for a great burger-eating experience. If you want to change it up a bit, ask to add bacon or southwest chili.


Another dish that is a must try is the Terrace Chicken Alfredo. The fettuccini pasta is smothered in a house-made Alfredo sauce with broccoli and topped with a grilled chicken breast. It is great pasta and yet another staple dish in many Western menus.

 

Lastly, the steak at Terrace turned out to be nothing shy of amazing. Jon has the idea that – if you’re going to get a steak at a nice restaurant, you might as well get something worthwhile. For this reason, the steaks served at Terrace are ribeye cuts from Australia and come served with crushed potatos and mixed veggies.

 

In the end, the two hidden menus at the Terrace are now coming out to the public. Their Thai chefs are still doing the Thai menu and the Western menu continues to serve up the recipes offered by chef Jerome Abustan. That said, if you are looking for an amazing Western dinner or something Thai and authentic, give Terrace a shot!
