   You might know that getting your hands on some authentic Ethiopian cuisine is not an easy feat when living in Beijing. Few have the patience and know-how to make injera; that soft, spongy pancake-like flat bread with which one eats the many spiced dishes.

  That is why 4Corners is very pleased to announce a special collaboration with Abenet Belay from Habesha Coffee.

     Hailing from Addis Ababa, Ethiopia, Abenet has been cooking from a very young age. In Beijing, she has been catering for people in their homes and companies on request only.

  To Ethiopians, cooking is more than just mixing ingredients, it's a culture.

  In this culture, cooking is a way of sharing and spreading love on a plate. Cooking isn't done for only two or three people, it is done to eat with extended family and friends.

   To Abenet, this culture has impacted her to love the culinary arts. She cooks with a youthful passion as she remembers the flavors she was exposed to in her childhood.

  She brings those same flavors and exotic cuisine from her home to yours. 

      对埃塞俄比亚人来说, 烹饪不仅是将食材混合, 更是一种文化的传播。

      在这种文化中, 烹饪是在餐桌上分享和传播爱的方式。烹饪不只为两三个人而做, 而是将亲朋好友团聚在一起。

      对Abenet来说, 这种文化使她爱上烹饪。她传承童年的美食味道,在此基础上以热情创新烹饪。

      同样的味道,异国的情调。她将家乡的美食带到我们的餐桌上。

  Ethiopian food is famous for hot spicy dishes served on top of Injera. Injera is made from a very nutritious gluten-free grain (indigenous to Ethiopia) called Teff. 

   Injera features a slightly sour flavor that comes from the fermentation, the tangy flavor being designed to complement the flavors found in Ethiopian stews. 

     Injera is meant to be eaten with your hands. Tear off small bits with your hand and scoop up the stews and various dishes into it, forming a bite-size parcel that you tuck into your mouth. 

      埃塞俄比亚菜以Injera搭配各类香料菜肴而闻名,Injera 是由一种叫做Teff (埃塞俄比亚本土)的富营养无麸质谷物制成。

      Injera略带发酵酸味, 搭配埃塞俄比亚炖菜,两种味道相辅相成,美味加分。

      动起双手,将Injera撕成小块,用面饼勺起配菜, 再塞到嘴里细细品味。

Meat Mixed Platter

Ethiopian meat-based platters combine various meats and vegetables. 

埃塞俄比亚风味肉类蔬菜混合菜肴


Yë’bëg Tibs — Tender lamb meat cubes skillet fried with onion, rosemary, Ethiopian seasoning and with or without jalapeno pepper.  

香炒羔羊肉块,搭配洋葱、迷迭香和埃塞俄比亚调味料,可选加墨西哥辣椒。

 

Gomen Bëssiga — Chopped collard green cooked with cubed beef ribs, 

seasoned with spiced butter, onion, garlic and ginger. 

牛肋排配羽衣甘蓝, 用香料黄油、洋葱、大蒜和姜调味。

 

Doro Wet (Traditional Style 传统风格) — Traditional chicken stew gently simmered in onion, berbere (hot pepper) garlic and ginger sauce served with bone 

and hard-boiled egg (spicy or mild).

传统炖带骨鸡肉,搭配洋葱, 辣椒,大蒜和姜汁,佐煮鸡蛋 (辣味或原味)。

 

Alicha — Beef stew seasoned with turmeric, ginger, garlic, green peppers & Ethiopian spices. 

用埃塞俄比亚炖牛肉,加入姜黄、生姜、大蒜、青椒和埃塞俄比亚香料

 

Cottage Cheese — (homemade).

Dulte — Ground beef, shallots, spiced butter, jalapeño, hot Ethiopian 

spice.

Vegetarian Mixed Platter

素食混合拼盘

 Mixed vegetarian platters, also known as a fasting platter, include several 

types of legumes and vegetables.

也称斋戒拼盘,包括几种类型的豆类和蔬菜。

 

Duba Key Wet — Squash with garlic, onions, ginger and spiced with 

berbere (hot pepper) sauce.

大蒜、洋葱、姜和辣椒酱调味南瓜。

 

Yëkik Alicha —  Mild yellow split pea cooked with shallots, garlic, ginger 

and sliced green peppers.

香菜、大蒜、姜和青椒片烹制黄色豌豆。


Gomen — Cooked collard green with onion, garlic and ginger.

洋葱、大蒜和生姜烹羽衣甘蓝。

 

Fosolya & Carrot —  String beans, baby carrots skillet fried with onion in a blend of exotic spices.

洋葱混合异国香料炒豆角和胡萝卜。

 

Azifa —  Whole lentils with garlic, ginger, onions, olive oil, mustard, lemon and jalapeños.

小扁豆配大蒜、生姜、洋葱、橄榄油、芥末、柠檬和墨西哥辣椒。
