Pizza Saporita's 'Nduja Pie is Italian Spice on a Slice

Perusing the menu at Pizza Saporita – one of the capital’s two purveyors of Roman-style by-the-slice pizza, aka pizza al taglio – I came across a few new options, with one in particular catching my eye: ‘nduja pizza.

What’s so special about ‘nduja, you ask? It, dear reader, is the spicy spreadable Italian sausage snack time dreams are made of.

'Nduja (pronounced en-DOO-ya) originally hails from Calabria in southern Italy. It's made from a combination of pork and hot peppers, which lend red tinge to the resulting product, sort of like chorizo. Unlike chorizo, the flavor is more of a fiery than dry spice, and it's easier to take apart and spread on bread – or atop pizza.

And atop pizza is where I found it at Pizza Saporita.

I grabbed myself a slice, which came out looking fantastic, bits of the sausage dabbed here and there surrounded by cheese with a lot of crust (this being a corner slice and all).


Don't let looks deceive you, this is one delicious slice


Along with mozzarella, the folks at Saporita have added blue cheese to this pie, giving a sour punch which contrasts nicely with the heat of the sausage. What's more, the 'nduja works well with the thin yet crispy crust, leaving slightly nutty notes when the two are combined in a bite.

If you've yet to try 'nduja, this pizza works as an excellent introduction; a gateway drug to this wonderful sausage. Plus, at a reasonable RMB 27 a slice, it won't break the bank either.
