山海关浑锅

 

The hot pot is given a new name-----mixed pot----in Shanhai Pass. As the city leveled intangible cultural heritage, the mixed pot is the unique representation of the food in Shanhai Pass for its special seafood flavor as well as the delicate vessel served for cooking. Therefore, the mixed pot of Shanhai Pass has been highly fancied by the local people for many years.

 在山海关,火锅被赋予了另一个名字——浑锅。 作为市级非物质文化遗产,浑锅因其海鲜风味和美食美器成为山海关独一无二的味觉代表多少年来,一直是当地人所钟爱的美食。


Due to the extraordinary features, the mixed pot is always luring people’s tongues in its own way. As a saying goes “ the delicate food should be served with a delicate vessel”, the vessel for holding the food of the mixed pot must be the red copper-made pot with two ear-like handles that is heated by burning charcoals in a central chimney. In addition, the mixed pot should be always kept simmering because only in this way could the cooked food attain its full taste.

 山海关浑锅为何如此诱人,当然有着它的特别之处。人们常说“美食美器”,此言不虚。浑锅的容器,必是紫铜制双耳火锅,中间燃以木炭,沸沸腾腾,红红火火,只有这样才有味道。


The mixed pot inherited the folklore characteristics of Shanhai Pass’ s traditional hot pots. With the traditional red copper pot as the vessel, the chicken soup stock made from the secret recipe handed down from the departed ancestors is served as the soup base. The specially-made Chinese sauerkraut, carefully-selected streaky pork, meatballs, menzi, frozen tofu as well as all kinds of seafood are placed into the pot and braised by charcoal fire, which are of extremely unique features. While the finished meat is fat but not greasy; the meatballs are silky and tender with nice aromas; the Chinese sauerkraut helps to relieve the greasy feelings; the seafood enhances the holistic taste of the mixed pot; and the frozen tofu absorbs the oil and refreshes the mouth feel at the same time. Hence, with a long lasting aftertaste, people who have ever had the mixed pot of Shanhai Pass will be never tired of eating this special gourmet again in their life.

 山海关浑锅传承了山海关火锅的民俗特色。以传统紫铜火锅为器具,将祖传秘方炖制的老鸡汤、特制腌酸菜、精选五花肉、丸子、焖子、冻豆腐、各种海鲜放入锅中,以炭火炖制,极具特色。特点是白肉肥而不腻,丸子香嫩爽滑,酸菜解腻适口,海鲜提味独特,冻豆腐吸油爽口,让人百吃不腻,回味绵长。


浑锅的正宗吃法



浑锅,亦作荤锅,什锦火锅的一种,火锅是随着清军入关传到山海关的,“火锅、火炕、旗袍”是满族文化的代表。浑锅加入了山海关本地特色海鲜改良升级。它颠覆了传统火锅先有汤底再涮菜的顺序,而是原料先放好、排列整齐,再放入鸡汤。多少年来,浑锅一直是当地人所钟爱的美食。
