Sanxiaguo

彭城三下锅


Sanxiaguo is the most famous local food in Pengcheng Township of Fengfeng Mining Area. It is named after the food used for cooking. It consists of three meat diets (marbled meat slices, fried meatballs and deep-fried crispy pork) and three vegetable diets (steamed starched bean or sweet potato pieces, fried bean curd and fried potatoes). That is why it is called Sanxiaguo which literally means putting three into the pot. The choice of ingredients in Sanxiaguo is exquisite, with fine workmanship and a delicious taste, reflecting the unsophisticated rural customs of Pengcheng ancient town.

三下锅,是峰峰矿区彭城镇最具地方特色的名吃,它以做菜的食物命名,由“荤三样”——五花肉片、炸肉丸、炸酥肉和“素三样”——蒸皮渣、炸豆腐、炸土豆组成,因此称为“三下锅”。三下锅选料讲究,做工精细,味道香浓可口,体现了彭城古镇淳朴憨厚的乡土风情。


Pengcheng people add oil in a large pot to fry the sauce, which is known as Lou Jiang. After fried with simmering hot oil, the sauce is continued to be boiled in old soup. And the three vegetable diets, young garlic shoots, spinach and other fixings  are put into the pot and stewed. They are removed from the pot and served in the bowls with the three meat diets on the top. Then a delicious Sanxiaguo is ready.

用大锅入油,搂酱(彭城人把炒酱、熟酱叫搂酱)。用文火温油把酱搂好后续进老汤烧开,汤烧开后,把“素三样”及蒜薹、菠菜等配菜陆续放入锅内炖熟,之后出锅盛碗,并将“荤三样”浇在上面,一道味美可口的“三下锅”就做好了。



The ancient town of Pengcheng is a cultural center of the Cizhou Kiln with a history of over a millennium. The long history and profound cultural heritage have created the unique dietary features. And eating Sanxiaguo has become the main cuisine custom in Pengcheng people's lives.

彭城古镇是具有千年历史的磁州窑文化中心,悠久的历史和深厚的文化底蕴造就了彭城古镇独特的饮食特色,吃三下锅成了彭城人民生活中的主要食俗。
