Shanghai produced yet another winner at a national bartending competition, with Michael Chen winning this year’s China finals of The Chivas Masters cocktail competition last Tuesday.


在这场全国性的调酒大赛上,来自上海的选手又一次夺得桂冠。上周二2018芝华士鸡尾酒大师赛中国赛区总决赛上,Michael Chen以淡定的姿态夺冠。


Chen, who bartends regularly at The Cannery in Shanghai, competed against eight other competitors from around the country at Andaz Xintiandi Shanghai hotel on May 22. He eventually took the crown ahead of Frederick Ma from The Cirque in Xi’an and Jimmy Deng from Mr. Q in Chengdu.


5月22日在新天地安达仕酒店,来自上海酒吧The Cannery的Michael Chen与来自全国各地的调酒师一决高下,最终夺得冠军宝座,来自自成都Mr. Q Bar、素有“成都-张智霖”的Jimmy Deng凭借网络票选获得了“人气冠军”,而来自西安The Cirque的Frederick Ma则蝉联了亚军。


This is the fifth straight competition final the Scotch whisky brand has held in Shanghai, and this year’s contestants had to make three cocktails, each based on a different theme.


这是芝华士鸡尾酒大师赛连续五年在上海举办了,今年的参赛者们要根据不同的主题制作三款不同的鸡尾酒。


The first drink had to be inspired by community, and feature the brand’s flagship whisky, Chivas Regal 12. The second was a drink that recalls Japan while using Chivas Regal Mizunara, a blended whisky that’s partly matured in Japanese Mizunara oak cask. The third drink had to feel like the United Kingdom with Chivas Regal 18 as the base spirit. Head below to hear Chen talk about his drinks and how he made them.


第一款鸡尾酒以“鸡尾酒联盟”为主题,选手需要以芝华士12年创作的鸡尾酒来表达团队间的真情实感,向调酒届前辈致敬,或是展现调酒师群体的闪光点;“日式风格”要求选手以芝华士•水楢为基酒,并且在日本文化中汲取灵感;“英伦风格”则要求选手以芝华士18年为基酒,创作出一款别致的鸡尾酒来展示不列颠群岛的丰富多元。下面来听听冠军Michael Chen解读他的作品吧。


As the winner, Chen will go to London in July for the global finals and compete against 23 other bartenders worldwide. Chen joins a growing list of bartenders from Shanghai who have came in first at the Chivas Masters in China. Past winners includes Yao Lu from Union Trading Company and Cross Yu from Epic. The local champion last year was Atsushi Suzuki from Sober Company, who also went on to cinch the world crown in his home country of Japan.


作为中国赛区的冠军,Michael Chen将于今年七月前往伦敦参与全球总决赛,与23位来自世界各地的调酒师一决高下。如今Michael Chen也成为了夺得芝华士中国赛区冠军的众多来自上海的调酒师的一员,此前夺得冠军的调酒师包括来自Union Trading Company的Yao Lu和来自Epic的Cross Yu。去年的冠军则是来自Sober Company的鈴木淳司,他也回到了他的祖国日本去参加全球总决赛。

  • 50ml Chivas Regal 12 infused with Gen Mai Cha

  • 15ml Manzanilla sherry

  • 25ml Clarified lemon juice

  • 20ml Clarified pineapple juice

  • 15ml Zero waste olea saccharum

  • 2 dashes Boker’s Bitters

Ponzu Project


  • 45ml Chivas Regal Mizunara

  • 10ml Chivas Mizunara-based banana malt liqueur

  • 10ml Miso, yuzu, and kombu shrub

  • 5ml Homemade ponzu sauce

  • 50ml Soda water 


“The inspiration for Ponzu Project came from Japanese food and its culture. This cocktail, designed to be paired with dishes, has a fresh taste and is made of ingredients common in Japanese food.”


柚子风暴

 

  • 45ml 芝华士•水楢

  • 10ml 芝华士•水楢香蕉麦芽利口酒

  • 10ml 味噌、柚子和昆布席拉伯

  • 5ml 自制柚子酱油

  • 50ml 苏打水


“柚子风暴灵感源自日本文化和美食。具体来说,这款鸡尾酒是受经典日式高球的启发,日式高球的制作已经发展成了一门与科学相结合的艺术。这是一款专门用来佐餐的威士忌鸡尾酒。它口感爽脆、清新,十分易饮。所以我用的都是日本饮食中常见的原料。”


Rules of Engagement 


  • 50ml Banana bread-washed Chivas Regal 18

  • 25ml Rinomato bitters

  • 7.5ml Luxardo apricot liqueur

  • 2 dashes dandelion and burdock bitters 

  • Earl grey and marmalade ice


“The inspiration for Rules of Engagement came from a few aspects of British culture. The name came from Gunfire, a popular cocktail in the British Army made from rum and black tea. The concept of this drink takes root in the British morning and afternoon tea, and I added some banana buns.”
