Food Culture Series: Crystyl Mo on the latest global trends
Back by popular demand, Gastronomy Club presents Crystyl Mo’s Food Culture Series talk on international dining trends at the Bellagio Shanghai on October 11, 2018.
Mo’s talk will give a global perspective on how chefs and restaurants are pushing social, cultural and environmental issues. Mo hopes to spark dialogue through sharing stories of chefs tackling challenging issues, from leveling gender equality to reducing food waste and saving biodiversity.
Mo has recently given talks at naked Hub Shanghai, W Suzhou, and Blue Hill at Stone Barns in New York. She recently returned from a trip covering Rene Redzepi’s MAD Symposium in Copenhagen, superstar chef Ana Ros’ breakout restaurant Hisa Franko in Slovenia, and Vladimir Muhkin’s White Rabbit in Moscow.
At the Bellagio event, Mo, who is Partner and Strategic Advisor at dining and lifestyle platform Bon App, will discuss a range of topics from China’s lack of global renown in fine dining to sustainable agriculture and the anti single-use plastic movement. She’ll share her experiences as Academy Chair for the World’s 50 Best Restaurants, a role which takes her around the world to meet chefs from Lima to Melbourne.
Drawing on her background as a life coach, Mo says she hopes her talks encourage audiences to reflect on how they can align their business’ mission and impact with their own personal values.
“Crystyl delivered such an inspirational talk,” says Gus Arevalo, Marketing Director Eurofoods Group, who attended Mo’s W Suzhou talk. “It got me thinking about food sustainability, and how our business can still be successful while having values that are aligned with the new trends and needs of the market and the community as a whole.” Mo believes F&B businesses can intentionally connect with a larger mission in which they can “do good while doing well.”
Mo’s next speaking events include a three-city Taiwan tour with chef Andre Chiang in October, the Tasty Trip Gastronomic Forum at the St.Regis Shanghai on November 5, a sustainability panel at the Chef’s World Summit in Montecarlo and a mindfulness workshop at Mirazur in Menton, France, in late November.
Mo has worked in food media in Shanghai for 15 years as an editor, consultant and TV host. She’s covered food and travel for Conde Nast Traveler, Food & Wine and Travel + Leisure, and was the founding food editor of Time Out Shanghai.
The Gastronomy Club and Mo plan to collaborate on a range of cultural events to benefit the F&B community. Club founder Yannick Lequellenec says his goal is to help “enrich the discourse on diverse issues, catering to everyone in the field, including chefs, service staff, entrepreneurs, restaurants and hotels, suppliers and farmers.”
