Mediterranean cuisine is known to be fresh, flavorful, and healthy, but Francesco Bonato wants to add gorgeous to that list in his new role as chef de cuisine of Calypso Restaurant & Lounge at Jing An Shangri-La, where he’s presenting beautifully plated, authentic Mediterranean dishes.

Hailing from Venice, Italy, Bonato brings more than 17 years of culinary experience honed in some of the finest Italian and French restaurants around the world, including at Four Seasons Resort, Armani Hotel Dubai, and Beachcomber Resorts & Hotels in Mauritius. Prior to joining Calypso, Bonato was the chef de cuisine of the Italian restaurant in Bvlgari Dubai.
At Calypso, Bonato’s cuisine features fresh and seasonal ingredients, an abundance of truffles, mushrooms, and cheese, all presented exquisitely and bursting with complex flavors. Some signature dishes include gamberi scottati, spaghetti all’astice – handmade pasta tossed in fragrant garlic and anchovy sauce, and topped with fresh succulent lobster – and risotto ai porcini, which arrives creamy and lavishly covered in freshly shaved truffles.
All these and more can be enjoyed at Calypso Restaurant & Lounge, an airy two-story glasshouse whose tall glass panels retract in the warmer months for guests to enjoy alfresco dining surrounded by manicured greenery in the heart of the city. Scan the QR code below to book your spot.
