风一吹,香味远远就闻到了
Salivate over Zhongshan's 
preserved meat dishes 
to celebrate autumn
没有哪种食物
能像中山腊味这样
在煲仔饭里
和米饭结合得如此亲密无间
浑然天成

Bao zai fan, or Chinese clay pot rice, is a classic Cantonese dish. Zhongshan locals believe that there is no better topping than its specialty preserved meat that makes rice so savory.

颗颗饱满的白米饭被腊味的丰腴和香气浸润,舀一大勺吃进嘴,米香、肉香、熏香各种风味在嘴里弹弹弹,端起锅,埋头干饭!


The oils infused in the rice produce a delicious fragrance and the fat is sure to satisfy your taste buds. Each scoop of rice is steamed perfectly, and the meat is chewy and packed with intense flavors. What's not to love?

秋风起,吃腊味

在五桂山的客家人聚居地、在黄圃镇,每年秋天,晾晒腊味都会成为一道亮丽的风景线。

Wugui Mountain, where many Hakka live, and Huangpu town both have the tradition of drying meat in the autumn.




肥瘦相间的五花肉、嫩滑肥美的罗非鱼、肉质紧实的本地鸭......新鲜的食材经过裁切、清洗、腌制、再绑上牢固的绳索,置于庭院或露台晾晒。



The popular preserved meat consists of pork, tilapia, and duck. After the dirt on surface is washed off, the meat is cut into strips, then soaked in salt before being hung up in courtyards or balconies and left to dry.



与鲜肉相比,历经岁月风干后的腊味,脂肪和水分含量变少,肥肉不腻,肉更香,颜色红润透亮。即便是平时不爱吃肉的人,也会忍不住尝一口。


Compared with fresh meat, the cured meat contains much less fat and water, and displays a bright rosy color and has a strong flavor. The translucent layer of fat is exceptionally good as it is not greasy, making it appeal to even those who don't usually eat meat.
 

不止煲仔饭
中山人早已把腊味发扬光大
In addition to the preserved meat in Chinese clay-pot rice, Zhongshan natives have thought of and popularized many other successful dishes that use preserved meat.

黄圃腊肠 

作为“腊味之乡”

中山黄圃镇

是中国最大的“广式腊味”生产基地
Known as the "hometown of preserved meat," Huangpu town in Zhongshan is the largest base in China for the production and processing of Cantonese-style preserved meat.
 


黄圃腊味至今已有130多年历史。如今,黄圃腊味有60多个品种,以腊肠、腊肉、腊鸭、腊鱼品种销量最大。

Huangpu preserved meat has a history of more than 130 years and has developed more than 60 varieties. Preserved sausages, pork, duck, and fish are the town's best sellers.

作为中国国家地理标志保护产品,黄圃腊味已经是中山人饭桌上的常客,更是厨师研究菜品的重要对象。

As a China Protected Geographical Indication Product, Huangpu preserved meat has become a household must-have for locals, and chefs continue to create new flavors to add to their menus. 




百年间,黄圃腊味所衍生的菜式已达数百款之多,比如:
