Review | Cylus @ Shuiwei 探店 | 藏匿在水围村的宝藏餐厅-萨克思

Shuiwei is undoubtedly one of the coolest parts of Shenzhen, it boasts being home to some of the best bars and restaurants available and the comparisons with Hong Kong are drawn on a regular basis.

水围无疑是深圳一个最新潮的地方。紧临口岸的地理优势使这个热闹的街区汇聚了多元化的美食,这里还是深圳酒吧最早的起源地。


Most of the names are familiar and need little in the way of introduction, Woodpecker, Braceria Pugliese, Juice Baby Café and so forth, but what about Cyclus? Chances are this would be the first time you have heard this name.

这里的许多的餐厅大多数人随口都能叫得上名字,例如“啄木鸟”、“休闲吧”等等。但是,今天我要提名的餐厅——“萨克思西餐”鲜少有人提及。



At the time of writing I am currently searching through various online dictionaries to see what ‘Cyclus’ means, unfortunately, I can’t seem to find an obvious answer, and so that as they say, concludes that.

起初,写这篇推文的时候,我试图查找Cyclus的意思,弄明白餐厅为什么选用这个单词,但是翻阅了许多字典,并没有找到明显的关联。但是又有什么关系呢,我们先去吃吃看!


If you’re anything like me you may be a bit sceptical of restaurants with a certain menu type, salads, pastas, snacks, and probably a bit of a pizza menu. Such restaurants tend to be the awful in almost every way, you know the type, the pizza restaurant that uses tomato ketchup as the base and offers three different fruit pizza’s with mayonnaise topping.  

手绘风格的菜单虽然精简,但是包含了沙拉、意面、海陆鲜食等选择,至此,你可能和我一样有些许顾虑,毕竟现在有太多餐厅号称“丰富多样”,实则样样不行:调味番茄酱打底的披萨,又或者铺满罐头水果再淋上一层厚厚的蛋黄酱,非常之敷衍。



I'll admit, Cyclus scared me when I first looked through their menu, was I in for a butchered version of foreign food, or was this going to be the exception to the rule?

不得不说,刚开始翻开萨克思的菜单,我的确吓了一跳。今天会是一次错误的选择还是一个令人意外的惊喜呢?


Mighty Waldorf Salad with Mint Dressing – 48rmb

烧提子华多夫沙拉配薄荷酱 - 48元

Sous vide chicken breast, grilled grape, celery, apple, cashew, mixed veg.

低温慢煮鸡胸肉,烤葡萄,芹菜,苹果,腰果和蔬菜


I haven’t seen a Waldorf Salad anywhere in Shenzhen and my interest was immediately piqued. Well presented, I was pleased to see the apples hadn’t been browned and the salad offered a great mixture of textures with the cashew and apple offering a nice crunch. The homemade mint dressing was light but not too sweet or overpowering.

在深圳我还从来没吃过华多夫沙拉,于是一下子我的好奇心就被激起了!上菜的时候摆盘很整洁,清晰地看出苹果还没有氧化变黄,腰果色泽鲜美,蔬菜看起来非常新鲜。自制的薄荷酱浓度刚刚好,丰富口味之余一定也不腻。


Mexico City Salad with Lime Dressing – 48rmb

墨西哥城慢煮鸡胸沙拉配青柠油醋汁

低温慢煮鸡胸肉,牛油果,烤玉米粒,青椒,红洋葱,黑豆和蔬菜


When thinking of Mexican food my mind immediately thinks of spice, but this salad is more flavourful than spicy, the lime dressing giving it a citrus lift rather than trying to dominate.

当提到墨西哥菜,我第一个想到的是墨西哥各式各样的香料,但是比起单纯的辣,沙拉的口感层次更为丰富。配上独家的青柠油醋汁,清爽可口,这个口感我已无法描述了,你们必须亲自去尝尝。


Creamy Mushroom Soup – 28rmb

奶油蘑菇汤


I have never been the biggest lover of mushrooms and on a soup menu it would tend to be my last choice, however at present Cyclus offer one soup, and thus the decision was made for me. Rather than suffering through it I found myself thoroughly impressed and I would go as far as to say it is one of my favourite soups in Shenzhen, and for 28rmb, a real bargain.

我一直以来对蘑菇这款食材都不是特别感冒,因此,很少主动选择蘑菇汤。但是,萨克思的出品超出了我的期待,浓郁鲜滑,野菌的香气十分诱人,你还可以品尝到蘑菇的颗粒感,这可以称之为深圳最棒的蘑菇汤了!而且只需28元的,完全可以说是捡到宝了。

This was the first of two pasta dishes that we had on the day and both shared certain characteristics. The base flavours were the same, and were absolutely bursting with flavours of basil, garlic, and nuts, but the cherry tomatoes really shine through and make this delectably rich.

我们品尝了两款意大利面,这是其中之一。两者有着共同点,他们的口味基调都突出罗勒,大蒜和坚果的味道,而樱桃番茄的加入使得整个菜的口感更加清爽了。



Ligurian Pesto Spaghetti with Prawns – 68rmb

As above it was the basil that dominated the taste of this dish, but the pasta had a more creamy texture with garlic and herb undertones. Just like the other pasta dish it was exceptionally well seasoned and really packs in a lot of flavour.

这款意面可以感受到更强烈的罗勒香,相比红款,青酱意面的质地更加顺滑,再带上一丝香草的味道,非常值得一试。


With the two pasta’s being 58rmb and 68rmb respectively they both offer great value for money and could hold their own against pastas at the best Italian restaurants in town.

两款意大利面的价格都不贵,一款58元,另一款68元,特别值得一提的是,不少餐厅为了保证风味会大量的使用酱汁,每每光盘后,盘中总是剩下油腻腻的酱汁,在这里,你可以看到盘底也是干爽的,香草和酱汁的味道仿佛已经融入每一根面条里,一丝不多,一分不少,清爽的口感和浓郁的口味平衡拿捏的非常准。餐厅负责人告诉我,他(她)们其中一位合伙人是来自五星级酒店的主厨,今天我们所品尝到的2款意面,酱汁均是餐厅自己新鲜熬制和料理的。一番匠心巧思,再加上独特的价格优势,即使拿去和高贵奢华的意大利餐厅一比也毫不逊色!

The ribs follow the momentum of offering exceptional value for money. As a devout meat eater, I was genuinely surprised by just how much meat was available on this dish and would recommend sharing it.

作为一个无肉不欢者,我实在是对这个价钱下的份量感到太满意了,一定会推荐给我身边的每一位朋友。


The ribs are fantastically tender whilst the sauce is perhaps a little sweet for my personal liking but does pair well with the underlying flavours of the meat itself.

外焦里嫩,配上微甜的烧烤酱,让食材本身的味道发挥到最好的程度。喜欢咸辣的朋友,餐厅也替你们考虑好了,一撮孜然辣椒粉,一盘肉食,两种吃法!


 

Italian Herb Roasted Fresh Chicken (Half) – 58rmb

香草烧新鮮鸡 -半隻


A bit of a change compared to the rest of the menu, the chicken was juicy and succulent with a herb roast flavour, the seasonal vegetables also breaking away from the presentation of the other dishes and offering a more traditional and rustic flavour.

最后一道菜我们尝试了鸡肉,鸡肉非常多汁,又给了我一次对萨克思的信心。配上当季的蔬菜使得整盘菜呈现出一种不同的感觉,更加的传统更有乡村特色。

Cyclus are a restaurant in a truly wonderful area of the city, a stone throw away from the more well known Woodpecker & Brass House.

萨克思处于水围——深圳最多姿多彩的地区之一,离你们熟知的“啄木鸟”和“Brass House”也只是一步之遥。


In terms of value for money Cyclus are right up there with the top restaurants in Shenzhen, the quality of the food would be well at home in restaurants twice the price.

就价格和出品而言,对于萨克思西餐,请容我说一句——这究竟是什么宝藏餐厅啊!
