Superfly is unveiling a new a la carte menu, highlighting authentic Sichuan street flavours and bringing the lively vibes of the region's street food stalls to Beijing's tables. 





麻辣小包子

城市的味道在街头巷尾才够滋味。那些藏在深巷中的小摊位上有着祖辈相传的经典,也有时下流行的新味道。


The way to really understand a cuisine is by what local people eat everyday – and often this means street food. Street food stalls bring together flavours that have been passed on through generations with fresh, innovative takes.


你可以在这次的新菜单中吃到成都阿婆挑着担子叫卖的一碗担担面,也可以是玉林街边永远三五成群,围炉一锅的烤鱼,当然绝妙的创意必不可少,麻婆豆腐烤薄饼一定会惊艳你的味蕾,看看超级飛如何在街头出奇制胜!

In this new a la carte menu, the team at Superfly has created an assortment of dishes that recall Sichuan street food vendors, such as dan dan noodles carried on a bamboo pole by an apo (“grandma”) through the alleyways of Chengdu or the much-beloved grilled fish on Yulin Street, as well as innovative spins on classics in dishes like mapo tofu pizza.

川菜的精妙在于把多种调味料组合在一起,让其和谐的统一,互相衬托。主厨以此为灵魂创新研制出伤心鱼片,选用肉质肥嫩的黑鱼鱼片,经过简单的水煮,最后淋上用四川当地的麻椒、辣椒调配出的秘制料汁,麻辣的口感配上鱼肉的鲜嫩爽滑,一口就能俘获味蕾。


The “heartbroken” fish fillet and its sauce offer the iconic blend of Sichuan flavours where savoury umami, numbing peppercorns and spicy chili are balanced perfectly. Put on ice directly after cooking, the fish imparts a wonderful and inimitable texture.

担担面

Dan Dan Noodles 




担担面是四川大街小巷颇具特殊风味的著名小吃,因常由小贩挑担叫卖,由此得名。面条煮熟后,捞入碗中,铺上鲜香的面臊和少许的香葱、花生碎,再浇上红红的辣子油,一碗色香味俱全的担担面就呈现在眼前。用咸鲜辣来吸引食欲,充分刺激你的味蕾。


The most famous street food noodles in Chengdu are dan dan noodles. Taking its name from the bamboo carrying poles (danzi) which vendors use, the noodles are synonymous with the city.  The secret to delicious dan dan noodles is in the chili oil. Our chefs use six different chilies to make into our secret chili oil. These dan dan noodles will instantly bring you back to the street of Sichuan no matter where you are.

红糖糍粑是川渝地区传统的小吃,厨师将其这道菜搭配了冰淇淋,冷热相搭,激烈碰撞。中国白酒制作的冰淇凌最具创意,冰冰凉凉酒香满口。


For a sweet finish, the most celebrated treat is the sticky rice cake. These brown sugar and sticky rice cake can help alleviate the heat from all the spicy dishes. At Superfly, we use baijiu ice cream to add a layer of nuance to the warm sticky rice, creating a perfect pairing of flavours that’s full of baijiu's unique aroma.
