A New Exploration of Sichuan cuisine
At the opening of 2020, THE BRIDGE and chef André Chiang have invited the team from Michelin-starred ICHIMATSU to collaborate on a spectacular one-off dining experience themed around fire that will push the boundaries of international cuisine.
Across all of the world’s cuisine, cooking and fire (or heat) are inseparable. Fire adds flavour and brings ingredients to life. Carefully controlling temperature allows chefs to create countless different dishes.
In order to explore this concept, chef André has invited his friend of more than 10 years and a person often dubbed “the man who plays with fire,” Hideto Takeda, to work together on a dining event that is sure to spark conversation.

ICHIMATSU
Osaka’s Michelin-starred restaurant
Located in Osaka, ICHIMATSU is one of only a handful of yakitori restaurants in Japan to have won a coveted Michelin star.
Hideto Takeda opened ICHIMATSU in March 2007, taking the traditional Japanese art of grilling over open flames and transforming into fine dining. The restaurant has no menu; instead, Hideto Takeda offers a set menu based on the best produce available that day. In order to guarantee quality, the restaurant has just eight seats around the counter, making it one of the hardest restaurants to book in Osaka.
ICHIMATSU
Hideto Takeda started to learn about yakitori at a part time job he held during his university years and since then has travelled Japan deepening his understanding of this traditional art, creating his own unique conception of flame-grilled cuisine (known in Japanese as aburi).

ICHIMATSU sits at the cutting edge of the yakitori dining experience, offering a series of courses of different cuts of premium Japanese chicken, grilled over bincho charcoal.

12 years after opening, ICHIMATSU not only has a Michelin star, it also holds a rating of 4.14 out of 5 on Japanese restaurant guide and review site Tabelog.

From 10-11 February 2020, THE BRIDGE’s Chef André and Chef Sean Li will team up with Hideto Takeda and his team from ICHIMATSU to create a “FEAST of FIRE,” a dining event exploring the use of flames, fire, and heat.

Officially opened on 29 December 2017, THE BRIDGE is the first restaurant project in China from renowned Chinese chef Andre Chiang.
THE BRIDGE is located at Anshun Bridge, one of Chengdu’s most important historic landmarks. Hundreds of years later, THE BRIDGE is a symbol of the dramatic changes witnessed by Chengdu over the years.
In order to transform this historic landmark into a unique culinary destination, the founders of THE BRIDGE engaged award-winning international design studio to recreate the interior environment.
