Kombucha is a fermented beverage from mixing sugar, tea and SCOBY (Symbiotic Colony Of Bacteria and Yeast). The SCOBY is a lightweight membrane, a bit like jellyfish. After drying, the material is very similar to leather.

Human beings are used to using animal tissues to preserve food, such as sausages. SCOBY is a byproduct of Kombucha, which can also be eaten by vegetarians. It can be widely used in preserving food.
Polish designer Roza Janusz studied how to use SCOBY on food packaging. SCOBY, made up of bacteria, is biodegradable and can be eaten with food. SCOBY packaging is suitable for storing dried foods such as nuts, or salads. If the package is heated with the food, it will melt and give the food a hint of Kombucha.

Generally, chemical fibers (polyester or nylon) are by-products of petroleum and are very hazardous to the environment. They are non-biodegradable and unsustainable to the environment.

Biocouture is a London-based design consultancy that is pioneering the use of bio-materials for the fashion, sportswear and luxury sectors. The founder Suzanne Lee is a former fabric researcher at Central Saint Martin's College of Art & Design, and she discovered that SCOBY can be used as a fabric
The advantage of SCOBY fabric is that it can be dyed into a desired color with only a small amount of dye. Cotton and linen take up to at least 18 dips in indigo to achieve dark blue denim color, but because of the strong water absorption of SCOBY, it just takes one dip. Interestingly, the ingredients in the dark blue denim (indigo) allow the fabric to resist other bacteria and keep the clothes longer. However, SCOBY fabric is not water-resistant. if it is worn on rainy days, the clothes will fall apart.

Now Biocouture is working with scientists to research how to make natural resources more durable and develop more possibilities For more information, you can click below link to watch Suzanne's TED Talk
Zestea Kombucha also did a test to dry the SCOBY! It's just like leather!
