Sambal Belecan | Savour Issue 03
Sambal belacan is an everpresent cornerstone of Malaysian Peranakan cuisine.
Belacan's strange flavour has been described as akin to a sweaty sneaker or an old gym bag, but it's usage in the form of Sambal, a spicy condiment, extends from cucumbers to fruit to fried noodles.
In this video, we present an introduction to this elusively fiery condiment, from its minimal traditional recipe to its complex, uniquely Malaysian history.
