Rachel Gouk nomfluence 2023-11-28

Canton Disco, the sophisticated and contemporary Cantonese restaurant at The Shanghai EDITION, has just launched a new fall menu created by Culinary Director Eddie Leong.

Modern Cantonese cuisine in a chic and elegant space near The Bund.

The Space

Canton Disco

Located within The Shanghai EDITION hotel, near the iconic Bund, this captivating restaurant takes its name from the renowned Hong Kong club.

Canton Disco boasts a modern and stylish ambiance with Chinese aesthetics — dark, sultry, and elegant with an energetic soundtrack.

It’s one of those Bund destinations with flair that’s perfect for entertaining groups. Intimate banquettes, round tables for up to six people, and plenty of private rooms that can accommodate up to 10, tended by excellent service staff.

New Fall Dishes

Canton Disco is led by Culinary Director Eddie Leong, who brings with him 20 years of professional experience from Malaysia, Singapore, and Dubai. The restaurant offers contemporary Cantonese cuisine that pays homage to tradition while being presented in the style befitting a venue as hip as this.

The menu at Canton Disco is a tome! It's a huge selection of Cantonese classics and modern interpretations ranging from hearty double-boiled soups, barbecued roasts, dim sum, fresh seafood that's cooked to order, stews, and delicacies that feature sea cucumber and fish maw. Most dishes are made to share.

Here are some of the new fall dishes:

Beef Carpaccio (¥168) – A cold dish of beef carpaccio seasoned with house-made chili crisp, topped with crunchy tremella mushrooms. Smoky, piquant, and light.

Salmon & Smoked Duck Wrapped in Avocado (¥178) served with wasabi mayonnaise. A cool and creamy appetizer.

Chilled Yam Root & Guava (¥78) – Yam root and guava pickled and marinated in sweet and sour plum. Appetizing little bites that are also excellent mid-meal to revive your tastebuds.

Double-Boiled Sturgeon Tendon (¥288) with fish maw and dried abalone in silky and flavorful supreme broth. One of many things I love about Cantonese cuisine is the double-boiled soups, gently simmered over many hours to extract all the good, clean flavors. About half a dozen soups to choose from.

Canton Disco does some excellent Cantonese barbecue, featuring traditional roasts of goose, rose chicken, glazed pork belly, pigeon, and even suckling pork. New on the menu is a twist on the traditional selection, adding roasted eel to the mix.

Signature Five Spice Roasted Pigeon (¥178) – Traditional Cantonese-style roasted pigeon, given a slight twist with lemongrass seasoning. Crispy skinned and juicy.

Roasted Eel with Barbecue Sauce & Spices (¥228) – A very rich dish of roasted eel coated in sweet-savory barbecue sauce. Served flambéed tableside.

A combination of fatty and gelatinous skin and flaky flesh. Highly recommended! A dish that is preferably enjoyed with rice.

Another dish that begs for rice is the Stewed Beef Oxtail & Tendon (¥268). Meaty oxtail and gelatinous tendons stewed tender with Sichuan peppercorn and hot bean paste. It’s a lip-smacking flavor that’s all about xian (鲜, aka umami).

Braised Fish Maw (¥268) with bamboo shoots and black truffle – A replenishing dish of braised fish maw (that favorite gelatinous texture again) with crunchy bamboo shoots and black truffle.

Seasonal Vegetables (¥78) – Tender seasonal vegetables flash fried with chicken fat.

As for dim sum, Canton Disco has a modest selection of fan-favorites, available for lunch and dinner. Of the dim sum, the char siu pork buns reign supreme, followed by the scallop siew mai.

Char Siu Pork Buns (¥58) – A trio of fluffy steamed buns with sweet-savory char siu pork filling.

Be sure to ask for a serving of their house-made crispy XO sauce, if you haven’t already been provided with it. Highly addictive.

Steamed Scallop Siew Mai (¥78) – Pork and shrimp dumplings topped with scallop and vinegar caviar.

Brown Sugar Egg Tart (¥88) topped with bird’s nest.

For dessert, try the Shaved Coconut Ice (¥88) with black glutinous rice.

Canton Disco also has a great value lunch set for ¥258 per person.

It’s a 7-course lunch featuring winter melon with plum jelly the salmon and smoked duck with avocado, double-boiled morel mushrooms and sea cucumber, main course of honey baked cod or braised angus short rib, seasonal vegetables, wok-fried noodles, and dessert.
