In & Out Yunnan Restaurant, Refreshingly Different

We were recently invited back to In & Out, the Yunnan restaurant at Kerry Center to sample their new menu. I had to reach back in my memory to think back to the last time I was there - almost 2 years ago. Far too long actually, since in the interval I had completely forgotten how delightful their food is – bright, sour and spicy with plenty of healthy options for vegetarians. The food is refreshingly light and non-greasy, relying on herbs and spices for flavouring.

In their commitment to bring Hangzhou a taste of Yunnan, In & Out flies in fresh produce from Yunnan three times a week. Unique products like monk ivory, a slender white tuberous root that grows in mud and resembles small elephant tusks, hence the name “ivory”. This crunchy and watery root grows year-round but perishes after only 36 hours.

 Omelette with Canary flowers 金雀花煎鸡蛋 (36RMB) only available till early May

At In & Out, you can taste this ephemeral vegetable in Typha Latifolia with Fermented Soya Bean 水豆豉拌建水草芽 (38RMB) where the sweet, crunchy monk ivory is completed with a sour dressing.

Stir-fried Chicken with Yuanyang Red Rice 元阳红米炒鸡 (35RMB) can be eaten together with Stir-fried Chickpea Jelly 小炒鸡豆粉 (32RMB). The soft rice is mixed through with shredded mint, chilies and seasoned chicken while the chickpea jelly has a savoury, nutty taste.

We enjoyed two kinds of mashed potato dishes. Stir-fried Mushed Potato with Green Vegetables 小青菜洋芋泥 (32RMB) uses the slightly bitter mustard green to flavour the plain potatoes.


For Stir-fried Boletus with Yunnan Purple Potato 紫心洋芋牛肝菌 (38RMB), the purple potato tastes like a normal potato and is not sweet like the purple potatoes we have in Hangzhou. Bits of meat that resembles bacon adds a smoky flavour, topped with finely chopped wild Yunnan porcini mushrooms and a sprinkle of pomegranate seeds. Though the ingredients are exotic, this dish tastes as familiar as a bacon and potato breakfast hash.

Tofu dishes also came in two. The lime juice and chili flavour of Bean Curd Skin with Litsea Pungens 木姜子拌石屏豆皮 (32RMB) reminded us of Thailand. While the tofu balls in Steam Tofu Soup 汽锅豆腐圆子汤 (18RMB) has just a tiny amount of pork in it to give it the texture of meatballs.

Yunnan is famous for rice noodles and Oil-splashing Rice Noodles with Mushrooms 菌香油泼米线 (38RMB) is a delicious version with a sour, appetizing taste.

The Deep-fried Fish was first fried in oil for 1 hour in Yunnan before being flown here. It’s salty with a pepper and chili mixture that numbs and tingles the tongue.

There are plenty of interesting drink options to quench your thirst at In & Out, from red rice wine beverages to the Sour Papaya Juice and Lime Juice that we had. You can request different sugar levels in your juices too, such as half-sugar or no sugar at all.
