When you think of Hainan, what comes to your mind first? The coconut trees, or the Hainan Chicken, or the beach? From May 12th, Diaoyutai Hotel Hangzhou brings you Chef Chen Jinji from MGM Grand Sanya to have you experience the most authentic Hainan food. The whole food journey lasts about a month, so if you want to try some tropical food, pay a visit to Pinju at Diaoyutai Hotel Hangzhou.
Influenced by the weather, geographical environment, local products and resources, Hainan cuisine is derived from the cooking styles of the local people on the island. The food is lighter, less oily, and more mildly seasoned than that of the Chinese mainland. Seafood predominates the menu, as prawn, crab, and freshwater and ocean fish are widely available.
We started with one of the four most famous Hainan dishes: Wenchang Chicken (白切海南文昌鸡). It is so named because it was first produced in Wenchang City. The chicken is free-range and on a high protein diet. The most traditional way to prepare Wenchang Chicken is "white cutting", which involves immersing the chicken in almost boiling hot water and cooking it to preserve its softness and tenderness. It is then eaten by dipping the pieces in a mixture of spices including ginger and salt. All star-rated hotels and the major Hainan style restaurants serve this dish.

Dongshan Mutton is so named because it’s mainly produced in Dongshan Mountain of Wanning City. As for the mutton, it’s a delicacy featured with tender meat and a thick soup. It tastes fresh and is free of mutton smell. There are various cooking methods for it, including stewed, roasted, or braised in coconut milk. The one we had was poached with ginger (沙姜万宁东山羊), and the meat was very tender and not gamey at all. Just dip it in the special homemade sauce, and it’s so smooth.

There are about 200-300 wild vegetables growing on Hainan island, and the most famous one has got to be the Five Fingers Mountain. Poached Wild Vegetable with Medlar (浓汤五指山野菜) is made from this vegetable. You can feel the freshness and wild flavour once you put it in your mouth. It’s also something you don’t eat very often, making it very special.

Pan-fried Beef Wrapped with Leaves (捞叶香煎牛肉) uses the leaves that have been called the “Hainan soil ginseng”. Together with the beef, the outside is crispy, while the inside is juice—very tasty indeed.

We loved the Stewed Duck with Flos Arecae (槟榔花炖海鸭汤). Coconut Chicken Soup is a traditional Hainan dish, and Chef Chen changed the chicken to duck, with the essential natural delicious coconut and areca flowers, all the ingredients are placed in the open coconut shell to cook for 4-5 hours.

Stewed Pork Ribs and Glutinous Rice (黎家蕉叶糯米排) is also a highlight. Banana leaves are often seen in the folk banquet of the Li Nationality. In this dish, you can see the pork ribs are covered by Hainan glutinous rice, then all wrapped by the banana leaves which are then steamed in a pot. Gently open the banana leaves when you are about to eat. The fragrance makes people linger.

We finished our lunch with the Hainan-style dessert: Steamed Rice in Coconut Shell (海南椰子饭) and Hainan Sam Bo Luong (三亚椰子清补凉).
