For their latest culinary food festival, Wyndham’s Café Royale has something special to share with us. They have invited grand Japanese chef, Kimi Miro, who has been distinguished as a Top Ten Chef of Asia.

Kimi Miro hails from Tokyo, where he started working in restaurants at the age of 18. He studied tea kaiseki for many years then went on to study banquet cuisine. Currently in his 70s, Chef Miro has been cooking for over 50 years. He has seen taste preferences evolve through the decades and his cooking has followed suit. For example, foie gras was an ingredient never used in Japanese cooking, but now it is widely seen.

However, no matter the changes in consumer taste, Chef Miro’s cooking always aims to bring out the natural, original taste of the ingredients and seasonality, letting the guest feel the seasonal changes through his food.

We had just a small sampling of Chef Miro’s technique, from fresh sashimi slices to crispy mixed tempura, and it was in the miso soup that I could taste the mastery of his cooking. The broth had a depth of flavor, tasting both sweet and umami. The konbu (seaweed) and bonito (dried fish) flakes brought the taste of the ocean to the broth. Then pieces of salmon and seaweed added the finishing touch, making a well-rounded, satisfying soup.

Starting from Friday, November 23, the Japanese section of Café Royale buffet will be transformed and Chef Kimi Miro will personally be on-site to prepare Japanese delicacies for guests.
