With an increasing popularity in farm-to-table, is a growing appreciation of produce and heirloom vegetables from artisan farmers. Now we’re seeing restaurants treating vegetables less as accompaniments and more as stars in their own right.

⚠️  MORE is giving away a five-star dinner for TWO, scroll to the bottom to see how to get it.

A year ago, I made a list of 10 vegetarian restaurants in an attempt to widen my tasting experience and investigate healthy eating options BUT never committed to trying one. People that know me, know I LOVE meat. Today's featured restaurant, Wujie, produced a vegetarian menu so exquisite, I didn’t miss the meat at all.

Deputy Chef Richeal Zhou shared with us that Wujie's Huangpu store in Shanghai had kept its Michelin star for another year and that he's proud that Hangzhou was awarded "Black Pearl", the most distinguished Dianping designation.

During lunch today, we tasted 14 (mostly appetizer and starter) items from their new winter menu. These items don’t have names or prices yet, so I’ll share a brief description of each and its main ingredients.

This nourishing soup was perfect for the season and was served piping hot. Morel (羊肚菌), imported from Hainan provided a rich mushroom flavor and stewed with jujube for two hours had a light sweetness.

Resembling pate and served with wafers, eggplant and cashew incorporate duck egg yolk before being steamed at 85°C for 35 minutes before being panfried.

The wrapper is bailing gu (白灵菇), a wild mushroom that has been filled with a taro noodle gently fried in garlic butter and salt. Dressed with Hangzhou pepper, dried bamboo shoots, mango, beetroot, and snow peas it was an eye-catching and delicious starter.

We were lucky to try a second soup which featured shredded radish. The soup was reduced for a long time with a subtle amount of ginger and delicate strands of doufu yi (豆腐衣).

Green beans with beefy looking mushrooms and peppers. The dish is not trying to fool people that it's meat but acknowledges its inspiration as a classic looking Hangzhou dish.

The pumpkin battered mushroom balls were moorish. Accompanied by braised winter bamboo shoots, taro discs, and a taro and pumpkin paste, each ball was a delight.

Delicate white mushrooms (海参菇) were stuffed with Gorgon fruit (盘菜) and tofu with a light home-made soy sauce.

Pot roasted twists of tofu were braised in a thickened sauce with a variety of seasonal mushrooms, cinnamon, fennel, star anise, and ginger.

These ‘sausages’ have a thin tofu wrapper which has been filled with shredded radish.

Tempura battered perilla leaf pays homage to Japanese cuisine and each dumpling is filled with taro puree.

The vegetable tempura maki (sushi) rolls use organic rice from North-Eastern China. Topped with tomato, cucumber, the flavours worked well and the texture was good.

Sea cucumber mushrooms are the hero of this dish. They can only be found in the north. Bound by soybean fiber they are topped with the spicy topping you might be familiar with getting on bar peanuts in China.

You know that a lava cake is good when the chocolate fondant rushes out the side. With the biscuit crumb and ice cream, this classic dessert was very satisfying.

The final dessert was creative and original. Something like a deconstructed apple strudel or crumble – I can’t decide, I love both and the dessert had the key elements of each. Served with caramel ice-cream, caramel sauce and a very delicately whipped cream inside a light pastry roll.

Wujie opens a wonderful opportunity to make a strong impression on your boss, a memorable experience with foodie friends or a surprising moment with loved ones. Dishes are based on seasonality and change accordingly. Wujie showcases the best produce with intricately plated, refined vegetarian plates that hold their own in the absence of meat.

You'll find Wujie in Phase 2 of MIXC Mall on the second floor above Blue Frog.

There's plenty of parking below MIXC.
