Chinese Food Recipe: Sweet and Sour Tofu

材料 Ingredient
Lǎo dòufu
老豆腐
Firm tofu
(1 big piece)
Xiǎo cōng
小葱
Shallot

Teriyaki sauce

vinegar

备菜 Bèi cài( To prepare the dish):
将豆腐切成0.5厘米的厚片,用厨房纸 chúfáng zhǐ(kichen paper towel)吸干表面水分,葱花切碎,备用
Prepare the dish:
Cut the tofu into 0.5 cm thick slices, use the kitchen paper towel to dry the surface, chop the shallot for later.

油煎 yóu jiān (Frying):油热到8成后将豆腐依次下锅,改小火煎至两面金黄,拿出吸油。
Frying: Heat the oil until around 200℃, place the tofu piece by piece in the pan , pan fry over the low heat until lightly golden in both sides. Put them aside to dry the extra oil.

调味 Tiáowèi (Seasoning):2勺照烧汁+1勺香醋+淀粉+水混合,搅拌均匀调一个酱汁
Seasoning: 2 tablespoons of Teriyaki sauce + 1 tablespoon of vinegar + starch + water, stir and mix to get the sauce

上色 Shàng shǎi (Coloring):锅中留底油加热,放入豆腐后倒入酱汁,大火收汁后盛盘,撒上芝麻和葱花
Coloring: Heat some oil in the pan, add the tofu, then put in the sauce, simmer the sauce . Add the sesame and the chopped shallot before serving.
