The Nordic eatery returns with a revamped menu and interior

For a city of its size, Beijing's Western fine dining scene is disproportionately small, with only a few top-tier restaurants dominating the capital's F&B scene. So it was with a heavy heart that we received the sudden news of The Georg's impending closure back in March, with it seeming like Beijing's slim pickings were about to get even slimmer.

However, that's all in the past now, with The Georg recently announcing plans to return this August with a brand-new 'Northern European'-inspired menu, along with revamped interiors.

The Nordic eatery's two-storey-high entrance hall has long been a focal point of the lifestyle space, which still features art galleries, a lounge, bar and private dining room as offshoots of the main central space, yet all now boast refreshed interiors courtesy of Danish studio Space CPH.

Inspired by Nordic influences, The Georg's new menu seeks to highlight fresh, seasonal ingredients as well as traditional cooking methods such as dry preserving, curing and fermentation.

Braised salsify, comté and leek.

Featuring 12 brand-new dishes created by new head chef Bin Bin Wang (former head chef at the Four Seasons' Opus restaurant), this new menu offers a very democratic selection of three seafood dishes, three poultry dishes, three meat dishes and, you guessed it, three vegetarian dishes. A sneak peek at the menu features highlights such as salsify, comté and leek – braised for hours, it's a dish that somehow looks like spring yet tastes like winter – sous-vide New Zealand lamb with truffles, and the very Nordic-inspired combination of mackerel, smoked cheese and pickles.

40-day dry-aged sirloin steak with celeriac, fermented mushroom sauce and Australian winter truffle.

In keeping with their mission to serve up fresh, seasonal produce, The Georg's menu will be updated every two to three months, so diners can periodically expect to find something new, along with more casual offerings during lunchtime. Finally some fine news for fine dining, then.
