Inside scoop: No-fuss cocktail recipes from Rodrigo of El Barrio

Feeling cooped-up and a bit bummed out? Inside Scoop, our new series picks the brain of various Beijing experts and gets some antidote on how to keep our mind, body, and spirit in tip-top shape as we lay low for the time being.
Looking for some liquid therapy to face the isolation blues? While waiting for a drink delivery from your favourite watering hole takes a bit of patience, whiping up a refreshing cocktail at home takes no time.
To help stir some inspiration, we asked Rodrigo Lizardi, the head honcho at El Barrio to divulge some of his favourite summer cocktail recipes, the drinks he knows how to make from muscle memory. Get crafty with all that booze you panic-bought with these delicious, easy-to-make sippers below.

1. Campari G&T

– 40ml gin (any brand of your preference)
– 20ml campari
– Tonic water (any brand of your preference)
– Lemon peel and rosemary leaf
Pour gin and campari in a cup filled with ice (could be wine a glass or collins glass).
Add the rosemary leafs and tonic water, and stir
Twist the lemon peel for garnish, and serve
2. Aperol Spritz

– 60ml aperol
– Soda water
– Prosecco
– Orange slices
Pour aperol into a wine glass filled with ice
Add a dash of soda and then top up with prosecco
Add the orange slice, stir and serve
3. Mojito

– 50ml rum (dark rum recommended)
– 20ml lime juice
– 20ml sugar syrup
– 6 to 8 mint leaves
– 2 lime wedges
– ½ tbsp brown sugar
Instructions:
1. Pour lime juice and sugar syrup into a jar or a cocktail shaker
2. Add the lime wedges and brown sugar
3. Place the mint in the bottom and use a muddler to press it gently until it becomes aromatic (don't muddle too much as the mint could become bitter)
4. Add ice, rum and a dash of soda water and stir well
5. Pour into a Collins glass, add some mint leaves and lime wedges for garnish, and serve
