拳击猫精酿啤酒馆北京店! | Boxing Cat Brews in Beijing!
你可能已经听说了，北京的拳击猫已经开始营业了！众所周知，北京是中国领先的精酿啤酒城市，我们想带来的不只是一个坐落在北京的酒馆，而是全新的精酿啤酒体验。于是我们特地在北京店设计了一个酿酒区。现在，让我们快速地看一看北京拳击猫的“独家配置”吧:
As you may have heard, Boxing Cat Beijing is up and running! As we know Beijing is China’s leading craft beer city, we wanted to go beyond a taproom and bring the full experience, with a brewing system on site. Let’s take a look at what we have setup for our Beijing brewing:

About The System:
我们终于把原本虹桥店的酿酒区搬到了北京！拳击猫向来以其啤酒创新而闻名，如紫露珠火龙果酸啤、鼻血炸弹印度淡色艾尔、超新星香槟，还有惊悚马尼拉——中国最早的商业化柏林小麦酸啤酒之一。这一次，因为知道北京人又多么疯狂地热爱啤酒，我们决定将创新之力传给北京金尚店！
We finally relocated our former Hongqiao brewery and hauled it all the way to Beijing. Our HQ location was known for its innovation brews such as Purple Rain Dragonfruit Sour, Nose Breaking Red IPA, Champagne Supernova, and Thrilla in Manilla – one of China’s very first commercially available kettle sours. We are super excited to continue this tradition of innovation on the very same 5hL brew system in Beijing, knowing very well how much those Beijingers love their crazy beers!

About The Brewers:
你们大家应该都知道MJ，他周游世界为拳击猫代言。不过他常居于上海，鲜少出现在北京。但不用担心，拳击猫北京店也有常驻的超级酿酒师——Lei和Kate!
You guys know MJ. But MJ lives in Shanghai (and travels the world to rep Boxing Cat). We needed to find some Beijingers to run the operation in the Capital or we were pretty sure we wouldn’t get it right.
我们的首席酿酒师Lei （张磊）来自北京。他于2010年第一次接触精酿啤酒，而后于德国慕尼黑获得了酿酒专业的硕士学位，并曾先后工作于德国及福建省的小型德国啤酒厂。天知道我们有多幸运——能够在他准备回北京之际与他相遇，并成功邀请他与我们一起，把国内外的专业酿酒知识带回他的家乡——北京。
Introducing Lei & Kate – our Beijing brewing superstars.
Our Head Brewer Zhang Lei was born in Beijing and first got into craft beer in 2010. He got his Master Degree in Brewing in Munich, Germany and has worked for a small German brewery, as well as Paulaner, both in Germany and in Fujian province. We were fortunate enough to meet Lei at a time that he was ready to move back to Beijing – bringing all of that international and local expertise to his hometown.
Kate 也是北京人。2014年，她开始在家里酿造葡萄酒来作为一种消遣，而此前她曾在美国学习酿酒。2016年，她被百威英博(AB InBev)选为全球管理培训生，在那里，她打破了常规，专注于酿酒，而不是像她的大多数同学那样专注于HR或是Marketing。在武汉的大型酿酒厂里待了一段时间后，Kate 也像Lei一样渴望回到北京，和她的朋友和家人在一起。因此，她回来了。
Kate is another Beijing native. She began homebrewing as a pastime in 2014, and before that she had spent time studying winemaking in the US. In 2016 she was selected for a Global Management Trainee position with AB InBev where she broke the rules and focused on brewing rather than HR or Marketing like the bulk of her classmates. After some time in Wuhan at our large production brewery, Kate, like Lei, was eager to get back to Beijing to be around her old friends and family.

About The First Brew:
几周前，我们北京推出了首届“京酿” (Beijing brew)。在MJ与 Lei、Kate的协同酿造下，我们选择了把这一款在虹桥的酿酒区诞生的鼻血炸弹印度淡色艾尔，最先带到北京。这款啤酒的酒精度为7.3% ，80+ IBUs ，呈红色，代表着好运。
A few weeks ago we broke in the system with the inaugural Beijing brew. MJ joined Lei and Kate for the day and they got to work. After a bit of discussion, we went back to a recipe first brewed on the same system in Hongqiao, our Nose Breaking Red IPA. This beer clocks in at 7.3% (woo) and 80+ IBUs (WOO). PLUS - it’s red for good luck.
