又到了亲朋好友久别重逢团聚的时刻,紧接着又有情人节到来,准备温馨的小聚会最是受欢迎,该怎么准备好看又美味、适合派对的美食?这就是你露一手的时候了!不必油烟四起,也不必大费周章大动刀工,我们邀请以融合创意菜闻名的寒舍羲和主厨,带我们逛超市,轻松搞定派对美食!


Chinese New Year is a time for gathering with family and friends, and Valentine’s day is right around the corner. The most popular way of celebrating is by hosting a dinner party, and many will choose to treat their valentine to a lovingly prepared home cooked meal. How do you prepare party foods that look perfect and taste great? With good instruction this can be achieved without professional knife skills, or filling the kitchen with smoke. We have invited the chef of My Humble House to shop together with us and to instruct us in easy ways to prepare festive party food.

派对美食有诀窍

Party Food Tips


主厨提示,聚会最重要是朋友聊天交流,食物准备的部分需要掌握几个原则:

  1. 避免需要上桌立刻食用否则变形走味的料理

  2. 甜咸搭配,爽口无负担并能满足馋嘴

  3. 易于取用,容易入口,不需要另加搭配或调料

  4. 拍照当然要上相,做个合格的配角,颜色鲜艳最佳


Chef Wang first advises that it is important to entertain your guests when hosting a party, therefore you should follow several principles of food preparation:

1. Avoid foods that easily lose their flavour and shape.

2. Sweet and savoury flavours should be served together to offer a variety of tastes.

3. Finger food in bitesized portions is ideal for serving before the guests sit for the main meal.

4. The presentation of the food should be colourful and photogenic.


因此,主厨为我们示范「摇滚沙拉」和「越式生春卷」,好看好吃,准备起来很简单,融合了东方口味西菜外貌,而且,这些都可以在芳草地LG2的城市超市里一次搞定!


Chef Wang shows us how to make Rock n Roll Salad and Vietnamese Spring Rolls. Both look fantastic and are easy to prepare. These two dishes combine Asian flavours with a Western appearance. You can get all the ingredients in City Shop at Parkview Green LG2.



材料准备超简单

Easy preparation


「北京风摇滚沙拉」挑选新鲜的西式生菜,搭配9种酱料组成的北京风沙拉酱,「其实最主要是这4种酱料:芝麻酱、米醋、生抽、芥茉。」主厨点名几种中式调酱,都是超市里随手可得的材料,也可以再加生抽增加鲜味,接着是芥茉油、日本酱油、橙汁调味,及一点点糖。


‘Beijing Style Rock and Roll Salad’ includes fresh western salad leaves and ‘Beijing dressing’ which is a combination of 9 sauces. Chef Wang named 4 main sauces out of the 9: sesame paste, rice vinegar, soy sauce and mustard. These are easy to find in the supermarket. To enhance the flavour you can also add mustard oil, Japanese soy sauce, orange juice and a bit of sugar. 




「越式生春卷」的材料也很简单,春卷皮,搭配生菜、芒果与虾仁,酱料也单纯,只有6种原料:盐、黑胡椒、蜂蜜、橄榄油、蛋黄酱和桂花糖。


It is also easy to prepare the Vietnamese Spring Rolls, using: rice paper, salad leaves, mango and peeled shrimp. For making the sauce you need only 6 ingredients: salt, black pepper, honey, olive oil, mayonnaise and Osmanthus sugar.

城市超市有新鲜蔬果和东西方料理用调料与常用食材,这里可以一次搞定。 客人们刚到的时候可以先切一些起司和火腿冷盘,让大家搭配着葡萄酒喝,这些起司火腿也能入菜作为沙拉配菜一举两得;主厨建议挑选大孔起司或瑞士起司,以干香浓为主的起司,搭配后面上菜的沙拉更显风味。


In City Shop at Parkview Green you can find fresh vegetables, fruits and a variety of western products and sauces all in one place, so you can grab all ingredients in one go. You can start with preparing hors d'oeuves with cheese and ham upon the guests arrival. Cheese is a perfect accompinament for wine tasting. Remaining cheese and ham can both be incorporated into the salad. Chef Wang recommends Emmental cheese or other Swiss cheeses which have a dryer and more intense flavour, to highlight the flavours of the salad. 




火腿可挑选西班牙或意大利风干火腿,放一点在沙拉上,不仅增添风味,还能让整体视觉上增加丰富性,更适合搭配各式葡萄酒单独品尝。


The best choice of ham would be Spanish or Italian ham to sprinkle on top of the salad. As well as enhancing the flavour, it also adds colour variation.  The ham is also ideal for accompanying with wine.


再到蔬果区挑选新鲜的萵苣叶菜,沙拉作为主角一定要挑选鲜嫩充满水分的菜叶,搭配小番茄等汁液鲜美的果类,以及一两款坚果和干果,这样会有新鲜与成熟、青涩与甜美的不同蔬果口感。


In the vegetable section you can find tender and crunchy fresh lettuce. Adding juicy cherry tomatoes and one or two types of nuts can create a taste of freshness that is also refreshing and sweet. 




这里有越南生春卷专用的春卷皮,还有进口的蛋黄酱,也是越式春卷的重要配料。


Here you can find rice paper for Vietnamese Spring Rolls, together with imported mayonnaise that is essential for Vietnamese Spring Rolls.



当然,还有派对必备的酒类,因为这次的菜色以蔬菜和海鲜为主,侍酒师建议搭配带一点果香味的长相思或夏多内,正好超市在举办意大利酒类促销,就挑选一款白酒,及一款意大利Borgogno红酒搭配火腿。


Of course, no dinner party can go without the offer of fine wine. To accompany our vegetable and seafood based dishes, our Sommelier suggests a fruity wine such as Sauvignon Blanc or Chardonnay. Currently we have promotions on Italian wines. Now is the chance to pick a bottle of dry white wine, and Borgogno red wine to pair with the ham.

摇滚沙拉

这一道「摇滚沙拉」最特别、也是唯一需要“烹饪”的就是酱料,其他就只是洗菜切菜了。


Rock 'n Roll Salad

All you have to prepare now is the dressing. Dressing aside, there is minimum effort involved in washing and cutting the salad leaves.


1. 北京风沙拉酱

芝麻酱、米醋、芥末、生抽,加入橙汁、糖拌匀,想要稀一点,就先加一点油,再加水;想要稠一点,就先加水,再加油。


1. Beijing dressing

Stir together the sesame paste, rice vinegar, soy sauce, wasabi, orange juicy and sugar. To make it milder, first add oil then water. To make it denser, first add water then oil. 




2. 沙拉也摇滚

将水果蔬菜放入瓶子里,再将酱汁倒入瓶中,开始上下摇晃,让酱汁和叶菜混合,这样很容易就均匀了。


2. Rock the salad

Place fruit and vegetable in a container and add the dressing. Shake it up and down. This will help the dressing and leaves to mix evenly. Be careful not to add too much dressing.




3. 容器要美丽

将混合了酱料的沙拉,放入木质大碗中,最后加上带油质的核桃或其他坚果(稍微烘烤一下),加上一点芥蔬油或橄榄油,完成一道酸甜咸鲜的美味沙拉,让大家随意拿取,就是一份鲜味可尝的派对前菜了! 


3. Present in a beautiful container

Place the salad well mixed with dressing into a big wooden bowl. Finally add lightly roasted nuts and sprinkle over a bit of vegetable oil or olive oil. It is now a completed delicious salad with mixture of savoury, sweet and refreshing tones. Serve as a tasty appetizer for guests to serve themselves.




越式生春卷

这道小吃料理人见人爱,做起来也很简单,只是关键食材的春卷皮不是到处都有卖,并且需要一点练习掌握手感。


Vietnamese Spring Roll

This popular street food is easy to prepare. Yet the rice paper is not available everywhere and it takes some times to practice the technique of rolling. 


1. 泡过水约1分钟的春卷皮非常滑,动作需要稍快,先铺生菜、放上芒果、摆上鲜虾、淋上蛋黄酱,快手包起。


1. Once the rice paper is soaked in water for one minute, it gets very slippery. You have to be quick to lay salad leaves, mango, shrimp and mayonnaise then wrap.




2. 春卷对切后,错落摆放让中间的切面露出,再放一点生菜装饰;沾酱可以越式传统,也可带点中国风像今天示范的:桂花糖、蜂蜜、柠檬、黑胡椒、盐及橄榄油,也是另种酸甜。


2. Cut the roll in half to reveal the layered filling. Place some salad leaves on the plate as garnish. You can choose traditional Vietnamese sauce or as Chef Wang suggests, the Chinese sauce: Osmanthus sugar, honey, lemon, black pepper, salt and olive oil. This brings a complimentary sweet and sour flavour.   




派对摆设

赏心悦目的小食放在美丽的餐盘里,白葡萄酒冰妥,红葡萄酒准备好,再加上一点桌花,派对的氛围就制造出来了。


Party Decoration

Finger foods should be presented on gorgeous plates. Chill the white wine and decant the red wine. A final touch of delightful table flowers will create a great party atmosphere.




简单而美好的小食是派对聚会的催化剂,主人也可以自己打扮漂亮地准备,尽情与朋友或情人交谈,不错过任何欢笑时光。
