Keep It Classy Brunch: Jade on 36 with Free-Flow Champagne

There is no shortage of brunch options in Shanghai, but classy brunches are few and far between. Enter Jade on 36, a brunch destination for a classy occasion, serving a set menu of re-imagined French dishes with free-flow champagne.

Those looking for a stylish yet laidback brunch can find comfort and elegance at Jade on 36. It's helmed by chef Olivier Pistre, whose romanticism of the traditional and classic shines through in his re-imagined French cuisine. Chef Olivier refreshes dishes and menus based on newly available seasonal ingredients.

The brunch is Jade on 36 is a set menu for ¥628 per person. It’s good value, given the quality of the ingredients and the experience.

The set includes a breadbasket, five bite-sized appetizers, lobster bisque, eggs Benedict, one main course of choice, pre-dessert, and one dessert of choice. It’s plenty, portion-wise, and presented in fine dining fashion. There’s also an option to add free-flow champagne.

It’s one of those special occasion brunches—excellent food and service, and an incredible view—perfect for celebrating an anniversary or birthday, or for romantic dates.


There's even a pianist, who plays a live jazz set on the grand piano.

Here’s what to expect from the spring brunch menu:


The meal starts off with a selection of freshly baked breads and house butters. If you’re worried of carb-loading too early, I highly suggest going for the croissants first, which are flaky, buttery rolls of delight.

The bread selection includes mini baguettes, pain au chocolat, flaky pastry with apricot, rye with figs, croissant, banana bread muffin, served with beetroot butter, basil butter, and unsalted butter.

Then, there’s an amuse bouche, which may change according to season. This is an airy hummus with dill oil, served with crispy wafers of bread.

Next, a selection of appetizers, five bites in two servings. 

Freshly shucked “Ancelin” French oyster – A meaty oyster with a light gin espuma.

Scrambled egg with black truffle

A platter featuring homemade smoked salmon gravlax, white asparagus with seafood hollandaise, and seabream ceviche with passion fruit and tropical fruit.

Next is an ambrosial lobster bisque. Seafood cooked down to a thick bisque packed with flavor, poured over spring peas and garnished with crispy jamon.

This is where a knob of fresh bread comes in handy.

Then, the requisite eggs benedict — a picture perfect brunch staple with a thick hollandaise with spinach over an English muffin.

It is usually served with smoked salmon, but you can opt for bacon instead.

For mains, there are five options, including flounder, salmon confit, turbot, spring chicken, pork rib, and dry-aged beef (supplement required).

I generally defer to beef or pork, but the Salmon Confit outshone the other mains. It was perfectly cooked to an even pink, juicy, and delicate. Served with morels, broad beans, spring bamboo, Iberico ham, and chicken jus. 

The Pork Rib, braised and cooked for 12 hours, is the heaviest of the mains. The fat-rich cut melts in your mouth. Served with grilled and confit eggplants, fresh orange to cut the richness, and arugula salad.

You can also get the dry-aged beef tenderloin M4 for an additional ¥118 (80g) or ¥228 (160g). Pictured below is the 160g portion, but trust me, it was too much by the end of the meal. I blame my greediness.

The wood-fire grilled steak comes with oyster and seaweed cream, cubes of barbecued beef tongue, beef tendon crisps, and grilled green asparagus. Taste-wise, it was great, and was only made better with the lusciously thick beef jus.

Jade on 36 “Sunny Side Up” – A pre-dessert of coconut and passion fruit.

For dessert, I highly recommend the French toast. It’s a medallion of overnight soaked brioche, topped with a scorched crown of Armagnac and sugar, served with prune ice cream. Custardy with caramel notes, lightened by the ice cream.

French Millefeuille – Caramelized crispy puff pastry with blanc manger, Tahiti vanilla ice cream, and crème anglaise.

Artisanal French Cheese (add ¥38) – Reblochon, comte, and camembert. Yeah, definitely a restaurant run by a French chef. 

The above is the spring brunch menu. Dishes will change according to season.

As for free-flow, it’s champagne. There are three options available, starting at ¥398 for two hours, each with a selection of three champagnes included. 

  • ¥398 - Ruggeri Agero Prosecco, Los Altos Sauvignon Blanc, Los Altos Cabernet Sauvignon.

  • ¥598 - Veuve Clicquot "Yellow Label" Champagne, Dr. Loosen Riesling Kabinett, Weingut Burggarten, Heimersheimer Spätburgunder.

  • ¥798 - Pol Roger Reserve Champagne, Jean Marc Roulot Bourgogne, Amiral de Beychevelle, St Julien.
