UTSUEMI (YI FENG GALLERIA)

Chefs here as as concerned with the artfulness of the dish as they are with the flavors, and both are incredible. Every dish used Japan-imported ingredients and expert technique to bring out the food’s natural flavors and beauty.

The man behind that artfulness is Shoji Kushida, with over 30 years of Japanese culinary experience and a number of awards under his belt.

As for the restaurant name, “Utsusemi” is a term that loosely translates to "beautiful reality," and in this case is meant to reflect the beauty of the Japanese culture that can be found in every aspect of the restaurant.

Its more than just food here, diners are greeted with surprises throughout the entire meal, we won't spoil any of them for you.

Picking up the trade at age 16, Chef Sakamoto has accumulated over 27 years of sushi making experience, 10 of which were spent in Hokkaido’s famous Sushi Zen.

After experimenting with 15 types of rice, the Akita Komachi rice was chosen. It's an arduous and difficult task preparing it, and is said to take around 3 years to master.

Their beloved Hokkaido Horsehoe Sea Urchin requires a half palm sized serving of the special rice, which is shaped before being topped with the highest quality Urchin available.

Despite the casual beauty, nothing about their food is simple. The tamagoyaki, for example, takes a whole afternoon to make. It is made from pan frying a puree of ingredients like fish, shrimp, chinese yam, eggs and sauce.

Apart from sushi, the restaurant also serves teppanyaki and tempura. In making the tempura, each step from the oil to the flour, uses ingredients that are specially selected, cresulting in a perfectly crispy, fresh and tasty dish.

Likewise for the teppanyaki, where fresh meaty lobsters from Miyazaki are mixed with Yuzu vinegar and tartar sauce to create a hearty and lovely lobster teppanyaki dish.

The sushi bar is notable here as well. Made from 300 year old cypress wood, it is cleaned twice daily and highly valued in the store.

Importing all the bizenyaki and ceramics used in the shop from Japan, you can be sure that all cutlery used upholds the highest Japanese dining etiquette and are intricately designed.
