C'est Pâtisserie Brings Petit Pastries to Changshu Lu

C’est Pâtisserie quietly opened a month ago on the busy strip of Changshu Lu occupied by Milkshake Bar, Una’s Pizza, Charlie’s and Dodu. 



The interior is simple elegance, which allows the highly conceptualized baked goods to shine. It is already filled with cool kids taking snaps for social media. The environment is well lit with a touch of brushed gold for Instagram-worthy coffee breaks. 


A selection of popular treats: citrus fruit sable, chocolate and fromboise cake, chocolate noisette tart and chocolate lychee 


Chef pâtissier and recipe developer, Chelsea Zhang, honed her craft at Ecole Lenôtre in Paris. The range of available cakes and tarts are seriously, creative from miniature cakes that look exactly like fruit to tarts with layers of fillings. Chelsea explains, “both myself and my sous chef have a background in savory cooking, so we like to include those flavors into sweets.” 


Pumpkin shaped tart (RMB 78)


The pumpkin tart is a fine example of savory flavors being combined with dessert. The pumpkin cream cheese mousse is flavored with ginger and rosemary and filled with rich pumpkin caramel. Think Thanksgiving, with a twist


Perfectly baked and plated fruit sable (RMB 68)


The fruit sable is another fresh blend of surprising ingredients. Citrus bursts of yuzu, lime and lemon cream come between layers of sable. It’s finished with a yuzu, bergamot, lemon, lime and fresh basil topping. 


Very realistic pastry versions of a lychee (RMB 82) and a clementine


The lychee dessert is a Valrhona chocolate shell filed with a shiso and sake gel and sous vide chunks of lychee meat. The clementine combines flavorful clementine and yuzu jam with airy orange blossom mousse and yuzu dark chocolate ganache. 


Black sesame sponge with cream (RMB 38)


The pricing at C’est reflects the premium ingredients and hard work put into executing such rare concepts. That’s why black sesame cream has zero trace of the graininess found in similar desserts around town. They use a high-end Bamix blender and strain it lovingly. 


Tarte Noisette with hazelnut cream and praline, chia seeds, Thai lime leaf (RMB 79)


It’s a formula that seems to be working. They are open until 9pm officially, but often close down shop much earlier due to items selling out. 


Framboise and flourless chocolate cake with cocoa butter frosting, raspberry jam (RMB 79)


Give it a look and make sure to take some pictures. If you are lucky, you will be there in time to catch a heavenly whiff of flourless chocolate sponge baking.
