Spice Things Up With This Simple, Tasty Beijing Recipe

A soon-to-be dad in Beijing noticed his pregnant wife craving different foods to eat, with her biggest complaint being she wasn't getting enough spicy meals. So, the man decided to cook up a storm of delicious spicy dishes on the regular, including fried bullfrog with duck sauce and spicy crayfish.
The chief ingredient of this recipe is latiao, a chewy, spicy snack made from wheat
Stir Fried Rice with Latiao
Ingredients
3 cups cooked rice
2 tsp Chinese soy sauce
1 cup peas
1 and a half cups 辣条 latiao
2 tsp chopped scallions
1 cup corn
1/2 cup carrots
3 tbsp chili powder
2 tbsp cumin powder
1 tbsp olive oil

Method

Cut the latiao into small one inch cubes

Chop the carrots into small chunks or bite sized pieces, and mix in with the peas and corn

Put the veggies into a pot of boiling water and blanch for three to five minutes

Add the olive oil to a large skillet and heat over a medium high heat, then add the rice, scallions, corn, carrots, peas and latiao

Mix everything and keep stirring occassionally until the rice and veggie mixture is crisp and tender. Add cumin powder and soy sauce and continue to stir for one minute

Once everything is incorporated and cooked through, this stir fried rice is ready to serve!
