瑞士“90后”小伙济南开起鲁菜馆
山东济南东城的一家中式餐厅“兰迪儒悦府”,处处展现着儒雅风尚。这家充满中国气息的餐厅是由一位瑞士“90后”小伙Alexander Frey在经营。
Located in the eastern part of downtown Jinan, Lan Di Ru Yue Fu features a traditional Chinese decoration, complete with antique furniture and exquisite Chinaware. The Shandong cuisine restaurant is operated by a post-90s young man from Switzerland Alexander Frey.
生于瑞士卢塞恩的Frey,出于对中国的热爱,给自己起的中文名叫“费腾”。

2009年夏天,还是高中生的费腾初到济南游玩时,就被这里的文化和美食所吸引,回国后,由于对中国文化产生浓厚兴趣,他便努力学习汉语。4年前,再次来到济南时,费腾已成为一位名副其实的“中国通”。
为了能更了解中国,费腾先后到过上海、济南等地,还喜欢上了中国传统的儒家文化,并最后应朋友邀约决定留在山东济南。
在这里的4年间,他利用自己所学的酒店管理专业知识开始步入餐饮行业。
他告诉当地媒体,他决定开这家餐厅是源于自己对中餐及其八大菜系的热爱。
Alexander Frey, the head chef and owner of the restaurant, told local media that the decision to open this restaurant stemmed from his fascination with the diversity of Chinese food, which is divided into eight cuisines.
费腾最初的设想是将正宗的西餐分享给济南人。随着对鲁菜了解的加深,费腾萌生出将鲁菜推广到世界更多地方的想法。

当下,费腾筹备了一年的鲁菜馆已进入试营业阶段。其菜品大部分以鲁菜为主,也有中西融合特色菜,餐盘、装修等都融入中国传统文化元素。
“开餐厅可以接触到不同层次的人,也是了解济南文化、山东儒家文化的好机会。大家思维方式不同,可以在彼此身上学到很多东西。”
"Opening a restaurant is a great way for me to get to know and learn from all different kinds of people, and it's also a good opportunity to familiarize myself with Jinan culture and Shandong's Confucian culture."
目前,费腾的鲁菜馆已有200余道菜品,除了100余道为传统鲁菜,其余的则是费腾与主厨冯光朋所创新的中西融合式菜品。
The restaurant offers an extensive menu with nearly 200 dishes. Besides Shandong cuisine, the new restaurant also offers dishes that feature Chinese-Western fusion, such as the roast duck with caviar.
费腾认为,向外推广中餐不能只靠菜品,还要充分考虑当地文化传统、风土人情等。
“互相尊重才能让对方接受并了解你想要推广的文化。如在国外推广糖醋鲤鱼时,我们会把刺去掉;迪拜等部分国家不吃猪肉,也会尽量避免相关菜品。”
"Mutual cultural respect is much more important. If we promote the sweet-and-sour carp abroad, we will remove the bones. In some countries, such as Dubai, where people don't eat pork, we will avoid serving such dishes," Frey said.
费腾说,未来,他计划将世界各地的特色饮食与鲁菜相融合,推动新的餐饮文化理念发展。他希望帮助鲁菜“走出去”,推广到旧金山、苏黎世和伦敦等城市,让更多人能够享受到中国的佳肴。
He is planning to promote Chinese food culture across the world by opening similar Shandong cuisine restaurants in cities such as Zurich, London and San Francisco in the future.
