2 New Bakeries: TonTon & FOTY, Pastries & Sandwiches

Two new bakeries worth talking about. TonTon, a bakery and sandwich shop on Yongkang Lu, and FOTY, a mono-product bakery churning out Kouign Amann.

TonTon is a bakery and sandwichery located on the quieter end of Yongkang Lu. Fantastical pastries and belt-buster sandwiches at this cozy shop brought to you by the team behind Mavis. 

Freshly baked pastries, breads, and pies is what you’ll find on the ground floor. Upstairs is where the sandwiches are constructed, as well as a small seating area. 

Since opening a month ago, TonTon has been swarmed with customers chasing that sugar high. Cinnamon rolls (¥36) and donuts sell like hot cakes, and to-go bags are stuffed with any pastry left standing. 

In addition to sourdough (¥48) and country breads (¥48), croissants (from ¥20) and Kouign Amann (¥26), they also have fluffy, airy donuts, fat with silky cream fillings. Six flavors available, donuts from ¥22. These are highly recommended, also written about here

As someone who claims to resist the powers of dessert and sugary things, the Pistachio & Raspberry Puff (¥38) has me on the verge of converting. It has a silky-smooth pistachio filling that’s not all too sweet by my standards, a tart raspberry jam center, encased in a crispy and airy choux pastry, crowned with dark chocolate.

There’s also a Smoked Eel & Leek Pie (¥78), a hearty meal in a neat little package of chewy-flaky pastry. The filling is just right, eggy custard with bits of mushroom, eel, and buttery leek.

Then there are sandwiches. There are half a dozen sandwiches on offer, all gargantuan in portion. 

Of these hefty beasts, I highly recommend the Fried Chicken Sandwich (¥108). It’s so glorious it would make Action Bronson’s eyes pop with glee. Cheese tucked into chicken breast then battered and fried, stacked onto a brioche roll with tangy, vinegary slaw. 

A word of caution for those eager to dive in—the cheese is molten, so give it a bit before you singe your palate. 

I’m also a sucker for tuna melts, and the Spicy Tuna Melt (¥108) sates my craving. Buttered sourdough toast heaping with mayo-fluffed tuna speckled with white onion, chives, and pickles, plus a layer of cheese. Undertones of heat, and oh-so ooey-gooey. 

Other sandwiches include Avocado Ham (¥108), Mushroom Melt (¥108), and Super Beef (¥188). 

As for drinks, there’s coffee and juices; an americano is ¥15. 



Kouign Amann




FOTY

FOTY (From Oven To You) is a mono-product bakery that specializes in Kouign Amann, a beloved French pastry that originated in Brittany. 

Kouign Amann, pronounced “queen-a-mahn”, means “butter cake” in Breton, the Celtic language of Brittany. It’s a pastry of humble ingredients, made with butter, bread flour, and sugar, and often a pinch of salt. It’s slowly baked to caramelize the sugar. The pastry takes on many shapes: rolled or pinched into muffin-like form or as a spiral. FOTY does the latter. 

One Kouign Amann at FOTY is ¥28. You can get it plain, or dusted with cinnamon sugar or cinnamon sugar and sea salt. 

It’s crispy and flaky on the outside like a palmier with a slightly chewy center, almost like a croissant, and sticky with caramelized sugar. It’s a sinful pastry that’s utterly irresistible.

The pastry is made to order. A display board of baking time slots shows when the next batch is available. You can pre-order on the coming time slot and pick it up. 

Most customers tend to wait in the store, which is comfortable enough, plus, you can also watch the baking process. 

One is plenty, two is a lot, three is me thinking there should be a warning label. Each person is allowed to purchase up to 4 only.

I’ve been asked by a few people about the differences between the kouign amann and the palmier, so here it is: 

Both are made with three key ingredients, flour, butter, sugar. Kouign Amann use a laminated dough; requiring multiple folds of butter and sugar in the dough making process, and it has a higher concentration of sugar and butter compared to palmiers. Texture tends to be crispy, more bread-like, like a croissant. Palmiers use a puff pastry dough, and the butter is more uniformly distributed. The filling (sugar, cinnamon) is folded into the finished puff pastry and immediately formed into shape. Texture is more of a flaky pastry. 

Differences are in dough type, how the dough is made, folding technique, and shape. Similar but not the same! Hopefully that helps answer some questions. 

FOTY also serves coffee, black (¥18) or white (¥28) available iced or hot. 

It’s located on Fenggang Lu, around the corner from The Cannery. The shop also has ties with ice creamery and cafe Luneurs and Korean restaurant group Belloco (Botong Sikdang, Pado, Jeju Sagye).
