南印度椰子咖喱 South Indian Coconut Curry

Here comes VoS's daily recipe! If you want to make yourself a delicious vegan dish but don't know how to make it, don't miss our article. Today we're going to learn about a simple and delicious dish - South Indian Coconut Curry, locally know as "Avial".


这道菜起源于印度的“喀拉拉邦”,除了被认为是印度最美丽的旅游景点之一外,喀拉拉邦当地的美食也因其美味而脱颖而出。


The dish originates from the Indian state "Kerela". Besides being known as one of the most beautiful places to visit in India, it is also Kerala's local cuisine that stands out for its delicious food.

“avial”这个词也用来表示“煮过的”或“在水里煮过的”——这个意思来自于菜肴的制作方法。有一个关于avial起源的可爱传说。在16世纪,一位国王命令他的厨房为他的臣民提供一场持续30天的盛宴,前面29天里一切顺利,到了第30天,他们的油差不多用完了——只剩下几滴了——储藏室里也只剩下几块不同的蔬菜了,于是他就想出了avial这道菜,国王非常喜欢吃,便下令以后每一个宴会上都要煮它。


The word “avial” is also used to denote ‘boiled’ or ‘cooked in water’ — this sense is derived from the way the dish is made. There is a lovely legend about the origins of Avial. In the 16th century, a King ordered his kitchen to provide a feast for his subjects that would last for 30 days. All went well for 29 days. On the 30th day, they were almost out of oil – only a few drops left – and there were only a few bits and pieces of various vegetables left in the larder. This is the dish that he came up with. The king so loved it that he ordered it to be cooked at every feast.

Avial配料 | Ingredients Of Avial

· 2茶匙椰子油 | 2 tsp Coconut Oil 

· 2-3个切开的绿色辣椒 | 2-3 slit Green Chillies 

· 1-2片月桂叶——如果你找到了咖喱叶就用吧,但是在当地很难找到 | 1-2 whole Bay Leaf - if you find Curry Leaves, use them, but they are not easy to find locally

· 1茶匙孜然籽 | 1 tsp Cumin Seeds 

· 250克蔬菜 - 胡萝卜,四季豆,土豆 | 250g Mixed Vegetables - Carrots, Green Beans, Potatoes 

· 125毫升椰子奶油 |  125 ml Coconut Cream

· 1/4杯大豆酸奶 | 1/4 cup Soy Yogurt


做法 | How to make:

1. 混合椰汁:用1茶匙椰油将孜然、香叶和青辣椒磨碎。然后和剩下的椰子奶油混合。

1. Coconut Mix: Grind the Cumin Seeds, Bay Leaf and Green Chillie with 1 tsp of the Coconut Cream. Then mix it with the rest of the Coconut Cream.


2. 把蔬菜煮一下放在一边。

2. Boil the vegetables and keep them aside.


3. 在锅里加热椰子油。加入混合椰汁,水煮蔬菜,盐。

3. Heat coconut oil in pan. Add Coconut Mix, boiled vegetables, salt.


4. 用小火煮2-3分钟,直到蔬菜和混合椰汁融入均匀。如果需要的话,加几汤匙水。把准备好的东西放在碗里,加入大豆酸奶,搅拌均匀。

4. Let the preparation cook for 2-3 minutes on low flame till the vegetables and the coconut mix blend well. Add few tablespoons of water if needed. Put the preparation in a bowl, add Soy Yogurt and mix it well.


5. 完成,享受这道南印度菜吧!
